You can just get one of those 15000 BTU portable burners. That's what I do for dishes that need heat levels changed a lot. I have an induction hot plate too, but I just like the gas. I can't justify replacing my electric stove yet, when it's failing I'll get an induction one.

I have always had a nice cooktop, from 6 burners, to center grill/griddle, and all electric. Two houses that I've had had external tanks for gas dryers, gas jacuzzi outside or gas lines to nice fireplaces. Both instances of the gas companies were utter crooks with high monthly charges with or without any usage amounts, refilling fees on top of it, and/or tank rentals each year. SO much ripping off. I have lived in a neighborhood which had underground gas lines, and the dryer was cheaper to use, mostly but during Hurricane Andrew, it smelled like the neighborhood would blow up when I returned to my house. There's a residual dampness as the byproduct of gas, that makes every load almost, but never quite dry.

When living in VA where fireplace nights were often, even in winter, I'd prefer a duraflame log with a timer on it, like say 1, 2, 3hour, to warm up a house and then completely out without stocking or ending the natural or gas lit fire, than fiddling with a gas line switch and ugly fake logs.

Long story short, I have little use for gas lines.
