Huh, I really like carbon steel, but most places sell really thin walled CS. Just go for the most indestructible looking and thickest walled one you can find. You MUST make sure it is all metal construction. The one in pic has a removable silicon handle guard if it wasn't removable do not buy.

I've never really messed around with thin walled CS pans because I only have dartos, but I could imagine the heating may be pretty uneven and heat retention kind of low. If you're using gas it shouldnt matter much.

The darto pans are 3mm and 4mm thick. That looks like 2mm or less.

try to get one without rivets that is 2.5mm-3mm thick, there's no point when it's thinner than that. the "light weight" ones are all garbage.
I regret getting de buyer because it has rivets. wish I knew about matfer before I bought it. it's also a bit warped on electric. another reason to get matfer instead...

because they are annoying as fuck. I would never buy a pan or a pot with rivets again after having cooked with them for years. a few weeks ago I got my first rivetless demeyere pan and there is no going back once you realize how much more work it is to keep them clean

Yes, I cook with my All-Clad all the time and it's not a big deal to clean. I think the reason people don't like it with carbon steel is you can't just throw it in the dishwasher, but I hand wash my stainless pans and never had a problem.
