I don't do it frequently but sometimes I ferment peppers with onions or whatever for a while, then puree it into a mush. I add back some of the liquid to get a good consistency. Once I added too much and then tried to thicken it with xanthan but made a jelly like mass that I referred to as napalm.
A mango-habanero sauce I made tasted the best.
