I want to kick this off by asking what appliances you think are UNnecassary? My gf wants a toaster and an air fryer / toaster oven. I think those are stupid and that we should get an instapot, rice cooker and maybe an electric kettle. We already have a kitchen aid.

A $1k rice cooker is not necessary, but absolutely fantastic if you love rice.

Anova precision oven is not necessary, but the size is actually really great. Bigger than a toaster oven, but a lot smaller than an oven. I use it for a lot more than my old toaster oven and my oven.

Sous vide. Meats on easy mode. If you're cooking a lotta of burgers, steaks, etc it is a god send for consistent and delicious output. Boiling in a plastic bag meme activate.

Microwave don't have an never will. The anova oven works 10000x better albeit much slower.

Air fryer. Only good if you like crispy things and eat a lot of frozen food. NOT the same as a convection oven.

Toaster ovens are super clutch, especially if you are just cooking for a couple of people. Super useful for cooking a couple servings of vegetables without having to heat up your whole oven. Just get the Ninja Foodi Toaster Oven & Air Fryer or the Brevelle Air Fryer/Toaster Oven (if you have the counter space).

That Anova oven is a nice size, really like that. You could fit a chicken in there if you wanted. Does it 'air fry' well?

Agree on the sous vide, and microwave. I own a microwave and use it to reheat leftovers, but back when I had access to a toaster oven I definitely preferred that. I use it for popcorn too.

How is an air fryer different than a convection oven, aside from it being turbo powered convection? I don't eat any 'frozen food' really (if by frozen food you mean premade, heat n eat stuff like taquitos, jalepeno poppers, etc), but I do make homemade french fries and chicken wings, and it seems nice for a gentle fry for stuff like raviolis, or crisping up nori.

I'm not 100% sure, but I think it has something to do with the air being heated as it is blown rather than just circulating the heat in the oven.

The anova oven air fries decently, but not as well as a dedicated air fryer.

It has steam injection, and what they call "wet bulb" temperature control. Basically they have a temp probe in a little water, so it knows the "real" temp in the oven. This means you can set the oven to sous vide temperatures and it holds it very well. No more boiling in a bag!

I cooked an 11lb turkey in my anova oven. I love the thing.

Yes they can, but the smaller portafilter is annoying because no grinder and very few accessories are designed to work with them. I machined my own blind tumbler to use with it.

The other thing that I wonder with them is that they actually flex when you're pressing the lever. I have a feeling that making the grouphead unlevel effects how a shot is pulled, but maybe that's just me.

With the less expensive models grouphead temp control is a bit of an issue you need to figure out also.

Custom made out of a hunk of 3" aluminum bar stock on a lathe. It works wonders to declump your your coffee grounds.

Grind into tumbler, place tumbler over portafilter, pull inner tab/lid thing, shake and tap the grounds to remove all clumps, use a leveller then press. I get god shots occasionally.

The smaller portafilter only takes 14-16 grams of coffee also.

It's a tough one. I've pulled thousands of shots with my pavoni. After 4-5 years of owning I do want to move up to something like a decent, but I honestly got my moneys worth out of the thing before wanting to upgrade.

Counter space is a major consideration. They make great espresso woth a very small footprint.

My mom got me a ninja foodi. I use it mainly to make frozen fries and dumplings. It works great for that.

Fun trick for fried dumplings in air fryer: open bag, pour a tbsp or 2 of oil inside, shake the bag like crazy and air fry them for like 15 minutes. They come out crispy.

If you like making stock and beans the electronic/automated pressure cooking is really convenient, but honestly if you're just going to be using itnfor pressure cooking stuff Ibwould soend the same money on a big ass pressure pot for the stove.

The automated pressure cooking works excellently with my foodi.

I have yet to make any bread with my apo, but I can tell at 100% steam it would do good things with steamed buns. I've been doing a lot of experimenting with cooking meats.

The really fun part about the apo is that it is a very novel way to cook food, so you can really let your imagination run wild with experimentation.

For example
I set it at 185ish and 100% steam for perfectly cooked potatoes, but I used a silicon "bowl" and had the potatoes submerged in heavy cream, butter, cheese, and bacon. After maybe 2 hours I used my food mill to turn the entire thing into mashed potatoes. Superbly delicious.

48hr meats with 100% steam also works amazing.

Do you have any thoughts on cooking this incredible piece of boneless short rib? It's from a black angus cow I raised and had slaughtered. 24-48 hr cook times work great with short rib.

I was considering searing it, apo at 145F for 36 hours sitting in a sort of tare kind of liquid and then after the 36 hrs searing it again, slicing it and having it on short grain rice with a sauce made from the tare.

Lately I mostly build my meals around cheap starches (bread, paste, noodles, potatoes, rice, corn, etc) to keep cost down so I can allocate more funds to higher quality meats, dairy etc. I do a lot of (americanized) italian, chinese (northern, sichuan), japanese like dishes along with traditional, southern and texmex american food. not sure why im telling you this but just so you get an idea of how i cook. i always mean to make more stocks, soups (great for leftovers), chillis and curries but never do, so I'm excited for the pressure cooker to help with that. im hoping between the rice cooker and instapot i can make some pasta pretty easy too.

The zoji you want depends on how much you love short grain rice and how much you're willing to spend. A pressure + induction cooker makes remarkably delicious short grain rice. If you eat rice 3-5 days a week getting the 500 dollar induction+pressure model will make you be a worthwhile purchase. If you cook mainly long grain getting the base 150 dollar model is more than enough for excellent rice.

The flame dance model has a "burnt bottom" setting that perfectly crisps the rice for claypot style bowls. :D Incredibly delicious.

The burnt bottom setting has gone to near blackened rice, but it has never tasted burnt. It's incredible what the Japs have done with their love of rice.

Yeah I'm gonna try it next time actually, my current process is pretty similar anyway. But yeah it's so laborious that I don't make it nearly as often as I'd like, and I sure do hate getting distracted and fucking it up. If you are getting the flame dance you have to try a chinese style claypot recipe with it. The rice doesn't look amazing from the pictures, but short grain rice always looks slimy in pictures. These are stupidly delicious and using a more traditional long grain rice, or short grain works equally as well.

The foodi is for air frying frozen food, dry beans, and when you need extended pressure cooking. You can make a super rich stock in the foodi to use in the zoji for a super flavorful claypot.

The rice cooker will always "dry" the liquid out of the pot. There is a porridge setting and water level, but that's a totally different dish. If you can get some dried scallops it makes a super delicious congee tho.

The thing I discovered is adding raw chorizo on top of your rice before cooking makes amazing rice.

Hell, I grew my own beans, let them dry, shucked them, and cooked them in my foodi to make the best beans ever. Most other thinfs I couldn't give you advice on becauae I havent used it for that.

Your rice cooker's goal is to make fluffy and non-soggy rice. It will continue to cook out moisture until it detects that it is all gone, so if you add too much water your rice will be overxooked, but it will also be perfectly dry.

Dont remember how much I paid for it. If you enjoy or appreciate the minutiae of kung fu ch it can be nice to have a yixing teapot. The heat transfer is instantaneous and you only really get the patina with a real yixing. Also I much prefer doong 8 brewings of a good pu-erh than a couple with a big teapot.

If you use a gaiwan, love it, and want to step your tea game up get a yixing teapot you like the look of.

I bought one of these scratch and dent from niggazon a few years ago for $41. It's marketed as a turkey fryer though I have never fried a turkey in it. Holds nearly 3 gallons of oil. The major issue with 95% of consumer level deep fryers is they hold a minuscule amount of oil that cannot hold any thermal mass when you toss something in. If your oil drops temp to hard that's how your food gets oily and nasty. With nearly 3 gallons of oil you can deep fry all you want and it comes out like a restaurant would. The only downside is it takes a bit to preheat. I keep mine outside on the patio so my house doesn't get that deep fryer stinky oil smell that never comes out.

Is it a true double pan or just two baskets in one larger pan? Double pan is great for keeping your fries and breaded snacks separate so your fries frying oil will keep longer. They're often a bit underpowered though so don't put in too much at once and prepare for a longer warm up time.

Also, looking for a recommendation. I have an electric range, which is very bad at temperature control. On high I've seen my pan reach temperatures of 700. At medium, it's still like 500 hundred, and at low it's basically off. I think it's sort of busted honestly and needs to be replaced, I've experimented with a thermometer on it quite a bit, and I can't seem to get it to function reasonably.
Long term, I want to replace it with a gas range, but in the interim I'm looking for an electric skillet or a little single pad induction cooktop. Something where I can have relatively good temperature control that isn't expensive to hold me over until I can buy a more major appliance.

Hmm, a rice cooker seems low power but I'm not sure about the pressure cooking part of it if you have a combined unit. Some instapots can be as much as a microwave, 1200W.
I didn't look that hard but for my purposes, I have a 600W heating element and most step down transformer units are rated for 500w and are at least 50$, next level up being like 3-4x that for 1500W.

IIRC the thermal regulation (at least on mine) is done using a bimetallic strip (or something similar) in the control knob itself. I have one that's busted on mine and its goes full on for an unreasonable amount of time on any setting before turning off.

When I looked into troubleshooting / replacement it seemed like parts were ~$50 with some trivial disassembly. I ultimately decided against it since its my landlords problem and I'm moving soon anyways so I just don't use that burner.

Long story short, maybe just try to replace one in the interim and see if the problem gets better

Flipped the banneton out onto a peel but it was stubborn so I decided to use baking paper to help me get it in

Bake for ~15 mins at this temperature with 70% humidity, turning the steam off once the crust has set and begun to brown.
Turn the temp down to 180 until it is done (usually a further 20-25 minutes).

Times will vary based on the size and shape of the loaf but it's pretty bulletproof if you can stomach checking on it every so often. I would always suggest making enough for at least 3 or 4 loaves, so you can play around and get a feel for it

For convenience's sake, you can also use the temp probe (although this is heretical) to tell you when the bread has finished cooking
