Hawke and Keating built a 'sin tax' in the 80's that would stay ahead of CPI inflation. When you buy a bottle of spirits you pay over $90 duties per litre of pure alcohol. Beer is over $55/litre pure IIRC but wine is just taxed at 29% of the wholesale price (because Keating is a cunt and liked to drink wine).
It's why VB about 10 years ago cut their alcohol to 4.6% to keep the price of a slab down, but had to put it back up to 4.9% because people would rather pay an extra 80c a slab for the real thing.
Boags Premium went from a crisp, full-bodied lager at 5% to a skunky watery 4.6% mess to save themselves a few million a year. Used to be one of my favourite beers, now I just drink Boags Draught instead because the price difference isn't worth it.

Here in beautiful Tassie we eat the local wallabies, they taste like kangaroo, only cuter.

The main issue is that our megafauna were wiped out by centuries of firestick farming before they could evolve smaller forms like in many other parts of the world. So the desertification of much of the continent meant few large herbivores. The largest native herbivore by weight IIRC is the dugong. There really wasn't much to base a cuisine on because all you really have is possums, cuscus, dugong, sea turtle, emu and various macropodiae. Seals and muttonbirds are available but severely limited in geography.

As far as edible native plants, apart from macadamias our native plants are difficult to cultivate as their yield per acre is so low. Even when supplied with plenty of water and nutrients they have evolved to fruit only grudgingly and in amounts just necessary for reproduction.

If you're interested there is an excellent book I highly recommend named "One Continuous Picnic: a gastronomic history of Australia" by Symons, which covers how we developed from a precolonial diet to the modern day full of convenience and junk foods without developing the 'peasant' or 'traditional' cuisine culture that anchors all the great cuisines of the world.

You also have to bear in mind that Australia was pretty much a closed shop until the 50's when Greeks, Jews and Italians were grudgingly declared culturally compatible with 'white Australia' and allowed in to help rebuild the economy after WW2.

Labor's dismantling of the Immigration Restriction Act (which was originally intended to protect the Australian working mans' conditions from being degraded by cheap foreign labour) was done at the behest of Trade Unions. Their movement wanted more power and the easiest way was to get import numbers of poor, scared workers with little fallback, few resources and a desperate need for protection. Funnel those workers' votes through that movement to Labor. Libs responded in kind, looking for trad people to offset. It's why Labor imported Leb Muslims and Liberals imported Leb Catholics.
