It's really not. My moms best friend lived in the Philippines for half her life before moving here. She still has family there and cooks Pilipino dishes. Unfortunately the only things that get mainstreamed are shit like Jollybee ketchup chicken that appeals to western palates and pagpag that goes viral because of one video. Filipino food is amazing if you get it cooked by a grandma or go to a cash-only hole-in-the-wall in any major fleet concentration area for the US Navy.
Seriously, the only reason I know anything about it is because flips are massively overrepresented in the Navy for various reasons and they'll get their families to cook massive batches of soup and lumpia for their friends. Every sizable command has a "Filipino mafia" and a couple shady restaurants they hang out at in town to get ungodly amounts of unpronouncable food.
I tried to get a flip Chief to tell me what the fuck pic related was about six times the first time he took me to get it and I still had no idea what he was saying until I got home and googled "Filipino pork offal stew." It is amazing.

sorry for blogpost sort of; as a american filipino who hated a lot of it growing up, some of its good
>a really nice sisig, especially a nice creamy chicken one w/ a tiny bit of liver & spiciness
>mung bean soup, especially with a little chili flakes on it or some leftover pork belly stirred in on a cold day
>sinigang, if you put use the right amount of tamarind its such a bizarrely perfect balance of savory and strange sour-ish flavor
>suman malagkit (desert dish of rice steamed in banana leaf, usually served with a rich coconut sauce)

I don't really like
>lechon - it just does nothing for me, it felt like it was for spectacle every time we had a party with a bunch of other flip families, the seasoning never blew me away.
>lumpia - its nice but really nothing special, I dont really like springrolls in general so maybe its preference.
>filipino style "bbq", at least from the restaurants & uncles that I would eat it from as a kid - always dry as fuck, sauce not really sweet or savory, just vaguely tangy. Never felt as hearty as american or korean bbq
>anything bangus - oily as fuck, gross fish, I would always watch in disbelief as my parents ate from the oily fucking belly fat deposit and enjoy it
IMO I feel like at least in the house I grew up in, filipino food always felt way too fatty or way too lean and dry

Here's what you never spent a second to think about (implying you even have a brain to think in the first place):
The Balut egg, when cooked, is essentially a complete duck dish with duck broth from both bone and meat. The flavour, when paired with salt and peppers, no other kind of egg can even compare because they don't have the bone and meat to impart that intense flavour into the broth (inside the egg). Eat with 1 or 2 leaves of laksa, the entire flavour profile is elevated.
But a bunch of cooklet faggots like you wouldn't know.

i live in canada in a tiny ass town and for some reason a million filipinos moved over here to work at the fucking plywood mill. they always cook up big meals and bring them to work to share and tasty candy made with condensed milk.
