I dispute the premise. Pork rinds are the froo froo milquetoast version of fried pig skin, all fluff and no body, as exhibited by your example picture of some delicately dusted snacks in an impractical paper container. Pork scratchings are delicious, pork rinds are foamy garbage.

>Why do they have such a trashy reputation?
they don't.

Presidents eat them. Low carb people eat them. It is skin, so just grosses out immagture eaters with crappy life experiences and no palate, and I guess you are in that category.

I can't eat them much, last two times that I indulged, probably kept going back to the bag for 2 days. Then came a kidney stone. My body can't cope with straight up protein like that in quantity. Its better to buy a small amount, and it's amazing by the sheet, from like a mexican store frying it on-site, where you can take it home, recrisp it in the oven and enjoy it with lime wedges and good hot sauce along with a cold beer. Think BBQ appetizers.

I have had cracklins in cornbread before, but it's a rare day to get a whole pork roast that still has the skin on.

Anyway, I prefer a chicharron with the pork belly still attached, like cuban or colombian style. There a middle layer that is so good :P
