What are some healthy ways to sous vide foods
I have a sous vide machine which I mostly use for either defrosting meats at low temperatures or making yogurt in glass jars but I want to use it to make meals, as it is a very convenient piece of equipment.
I have an idea of putting meat with marinade or stock+herbs into a glass container or something vacuum sealed in a way where the plastic bag does not contact the food.
Thoughts? Does anon have any plastic free sous vide recipes, is plastic even that bad?

all plastics degrade differently in different environments. saying "it still degrades" is a meaningless statement because everything degrades via entropy. For degradation to be properly considered you need to compare the material properties to the use conditions.

Silicone is incredibly non-reactive, so much so that it doesn't stick to anything except itself (non-silicone glues are worthless with silicone). It's used for permanent medical implants per ISO 10993 and high temperature applications from baking to rockets.

Depends what you mean, main difference is silicone is silicate based rather than carbon, and far more stable for cooking use. Also pure silicone doesn't have BPA or hormone mimicking traits afaik, no reaction because it's inert, no fumes. The advantage is food grade silicone can withstand high heat without degrading up to the point of combustion which is like 400-500 degrees+ and probably would need to be exposed to a direct flame. You might as well be scared of using a cast iron because the patina is polymerized oil, or be afraid of using cooking oil in general as it also breaks down if you're so scared of "degradation". Please adopt critical thinking.

Silicone could be considered a "plastic" by loose definition (or more like rubber), but it has none of the properties that makes plastic so toxic which you're afraid of. Listen to the slow cooker anon. Or get an instant pot/pressure cooker. Roasts, pork chops, chicken, plus it has steaming options for vegetables, levels for rice or risotto. Sous vide is such a specifically bourgeois way of cooking. Any meat you buy is already stored in plastic containers or vaccum sealed plastic bags. The meat at the meat counter comes into the store in plastic bags. Unless you buy directly from a butcher, your meat is stored in plastic anyway.
