I have an old timey hand crank meat grinder that I have never used
I also have some extra pork butt because it was on sale.

I have never really cooked with ground pork
Any ideas?

Homemade sausage is really hard to get right
I dont even like the high end ones I can buy locally and cost a fortune.
Ive been told its a problem of getting the fat mxture right and keeping it at the right temp when grinding

Coarse sausages are pretty easy to make. Fat content should be around 25-40%. Just knead the mass with your hand until it binds. You can even scald the sausage mass in glasses instead of regular casings for testing purposes.
Fine sausages are much more complicated as you will need a bowl cutter, ice and phosphates.
