So I don't know if I set my entire family and myself for a round of food poisoning.

>Cooked a 9kg turkey for the first time today. >The bag it was in suggested 325f for just about 5 hours but I accidentally set my oven to 350f
>turkey was ready in half that time. I poked it with my thermometer everywhere. Used another thermometer in case mine was glitching out. 180f+ every single poke and stab, clear juices
>Hacked it down to bone and cartilage and the meat looks great and tastes great

I don't know what happened. I don't think 350f vs 325f would have made much of a difference in cooking time. I just don't know how it cooked so quickly. It would have overcooked if I left it in the oven. I hope I don't get sick. I hate throwing up.

No. I followed a Gordon Ramsay recipe where you out a butter/lemon/olive oil mix and then bacon strips on top of it. The bacon strips are then used for the gravy. My turkey didn't dry out so it either worked or I gave everyone food poisoning. But like I said: clear juice, good temps, looks good in both look and texture. So idk.
