Season the meat, season, the batter. Good fried chicken doesn't need a sauce.

Why would you season after frying? It will get cold and it should already be seasoned by the coating and the brine

Also my spice mix is
3 cups flour
1/2 cup corn flour
1/2 cup of bread crumbs
1 Tbs MSG, oregano, ground white pepper, chilli powder, paprika
2 tsp mustard powder
1 tsp salt, cummin, garlic salt, onion powder, tarragon, cinnamon, baking powder and citric acid

I brine my chicken overnight in
2cups milk, 2tbs white vinegar, 2tbs lemon juice, 1tsp crushed garlic, some cracked black pepper and a good squirt of sriracha chilli sauce

Any suggestions on how I could improve this?

>> No.18734050

i think frying it makes the flavour disappear anyway. just make sauce

I lightly season the buttermilk. Dredge gets salt and nothing else. If frying, anything but salt in your dredge will burn.
