Took advantage of the Publix prices last 2 years in a row and got a 4rib portion.
Think British, really.
Get a nice trifle bowl and your trifle laced with sherry soaking, macerating the berries and boozy, get it good and cold. This is your dessert of choice.
For nice apps, anything seafood is popular, from an old fashioned cold shrimp cocktail to some stone crabs. For sides, you want a seasonal soup course, or a nice salad course, your pick Gorgonzola on that salad or cheese tray. It's pretty chilly this year, so the steakhouse soups are okay, like french onion. Remember you will want some horseradish w/ sourcream, lemon and parsley to make it special.
I like a good pan gravy which is going to happen with coffee in the pan and a covered roaster, so will want mashed potatoes with that roast beef gravy (versus roasted). Fancymode, twice bake some big potatoes. Bake up your tray of veggies from mushrooms to winter squash, brussels sprouts, mix em! or like tomato halves with herbs and breadcrumbs. A casserole like creamed baby onions or creamed spinach to add another side. If your oven is crowded, you rest that roast under foil, and reheat the gravy, that's all. Use your burner to steam some green beans w/red onions.
Pro-mode is yorkshire pudding. I am a sucker for nice rolls too.
MUST HAVE, a nice raspberry jello mold with cranberries and oranges. Or some kind of grandma style picalilli. It just goes to balance your plate.

wash and scrub
cut into 8ths, 12ths, 16ths, or 20ths depending on size
put into large mixing bowl
add olive oil, salt, pepper, garlic powder, optionally paprika
Toss to evenly coat
dump out onto foiled oven tray
bake in oven at like 400f for like 40m

You can try this in smaller batches to figure out your spice ratio preferences. I typically use only a little salt, a a good amount of garlic powder, and enough pepper that my family tells me to make them with less pepper.

I make a wellington every Christmas. This year we're having some bacon-wrapped asparagus and mashed potatoes. Chicken stock, chives, a bit of parmesan, and a fuckton of butter in the potatoes. The asparagus just has red pepper flakes and garlic salt in it. Nothing to it, but make sure the bacon comes out crisp and people will lose their shit over it.

It goes well with any holiday foods, this is last year’s with gratin potatoes, brussels sprouts, glazed carrots and stuffed acorn squash. Make a gravy, and make it better than mine in picrel (that’s pepper and herbs but I think it looks bad). I do this oven method >>18725078 and it always turns out perfect, medium/medium rare on the edge pieces and rare in the center. I’ve made prime rib the last few years but doing ham this year.

OP's pic might have been done in this 500 and off method, the meat looks red/uncooked rather than red/rare, likely not as tender as it should be
