A good seasoning for the mince: a big pinch of white flour, salt, pepper, some dried oregano or parsley, garlic powder, onion powder and the option of adding chili flakes or hot paprika. You could also substitute powdered garlic for fresh pressed garlic and the dried herbs for fresh ones.

Mix the dry powders all together then coat the mince and mix by hand. Add about a tablespoon of water and mix again until the mince is evenly coated and the mince has become a bit sticky.

Almost all burgers you buy at a restaurant and especially from fast food places are pressed from a mixture of beef mince and a similar fixing additive, but its ingredients are usually just rice flour, soy, salt & onion powder. The gluten in the flour will soak up any of the juices that run out of the beef making your burger patties a lot jucier.especially if you leave them to sit for a minute after cooking.

I use pickerel for the same reason. It's like a finely powdered bread crumb mix with a little salt and seasoning. I follow the package instructions for things like meatballs or meatloaf, but for burgers I use a lot less of the filler. It usually has enough salt but I still add the other spices.

I was so not sold on this shit for the longest time until I tried it and damn

>> No.18719234

>>18719175
You can't go back to pure beef patties once you've made your own with filler, same with sausages. The difference between a crumbly dry beef patty that all the juices have drained out of and a plump juicy one that has that crunch when you bite into it is night and day.

Your burger sounds like it would be garbage and you should be ashamed. Fucking euros can never make a good burger. You can't mix the meat like that. It ruins the texture of the beef and makes it spongy like a sausage or meatloaf.
