Roman pasta wasn’t long noodles. It was like sheet pasta, gnocchi, and small dumplings. The ingredients were the mostly the same, wheat, egg, water, salt, but the long hand stretched and cut stuff definitely came from the Chines.

It’s pretty good and fun to make. You gotta work quick though cuz those eggs will curdle real fast. I serve it with quick cure bacon, mushrooms, and a fuck off huge pile of parsley and lemon zest.
