gay as fuck because of the book. but this recipe does help as an excellent starting piece of structure to understanding what not to be afraid of when using heat and balancing a pan and pot at the same time. chili is so hard to fuck up - that's why it's at every fucking luncheon or gathering.
the spices piece is gospel. here's one that would help you gauge the ratio of volume to mass your pan can handle say if you were making something like shakshouka. i scoured GHT's recipes for almost a year straight atop the other pyramids and misc collections. phenomenal stuff as always.
