i just got 8 copper molds and I'm psyching myself up to give it a shot for Christmas. Supposedly its one of the toughest, most fussy recipes in all of baking.

They are correct, but there are some important points they are missing, which sort of makes me doubt their canelle abilities

You need the proper amount of butter/beeswax coating

The full must be precise or you've made mini canelles or non flat topped ones.

You must let the custard rest in the fridge for 24 hrs. 48 is better.

You must stir the batter very well before pouring into nolds and immediately place in oven.

You'll probably burn your first batch.

Make sure to let them rest for atleast 2 before eating.

I made them once before I tried the real thing. Only got fireproof rubber molds but they turned out alright. This year I got to try them in Bordeaux and to be honest I think I don't like them all that much.

I have 12 copper molds, making one batch in all of them once a day and 6 months of time is what it took to get it right.
You also need beeswax for greasing the molds otherwise the texture is all wrong.
