my friend you ostensibly already have one piece of the spendy puzzle (a capable kettle), a v60 is like $10, and while spending on a capable grinder would improve your cup so would learning how to do a proper pour over.
watch a YouTube video, try it with some pre ground coffee, and see how you like it. a hand grinder for pour over can be pretty cheap. some people still use hario grinders and those are like $30. the sky is the limit there if you want it to be.
or get an aeropress. it's not as expensive as you're making it sound

Eyeballed the nog, almost overflowed the damn thing.
Tasty but I'd warm up the nog more next time and maybe top with nutmeg.
I also added mushroom extract, didn't affect the taste. Shitake, maitake, lions mane, reishi, birch polypore, and turkey tail. Not sure if it actually does anything, but the placebo effect is real.

Just got my first espresso machine, a breville clone, and after pulling my first shots I am pleasantly surprised that they are only a tad bit sour, some of the sweetness is peaking through. Are these pour-over coffee tools any good? I've only ever had instant coffee, those kuerig cups and drip machine coffee.

Now I am trying to make better coffee since I feel like I haven't really had a decent cup in my life. Do regular round filters work okay or do I need special filters? You can use truncated cone filters in a conical pour over cone.
1. open up filter
2. place filter in one cupped hand (the anvil)
3. make a fist with your other hand (the hammer)
4. insert hammer fist into filter and rotate fist to round out the bottom
5. place paper into cone and sooth out paper seam
The scrunched, rounded bottom of the paper has no effect on the cup of coffee other than making the paper sit correctly in the funnel.

Oh thanks, that sort of explains it. The end part is bitter then? Or both of them are sour? I kinda like the sourness in a shot, but this time I tried not getting the first drops I also stopped the pull before all the water went through. Just used less volume than usual.
What tastes bad about my normal shot? ehh I guess sometimes it's a bit overwhelming and so overly intense that it makes me shudder. Other times it's too bitter to my liking. Worst when it's chalky bitter tasting, but that's something I remember from different coffee beans I used. Flair pro 2 also just doesn't do shots that are as warm as what you get from a proper cafe machine.
I really don't bother logging my shots as much as I should and I vary the grounds a little every time. I don't weigh the output.
The chart was useful for mentally explaining the flavors to myself, though I just get used to liking bad coffee instead of trying to better things. I don't want to invest more money than I already did. If I get an Acaia Lunar, that's like half the price of that Omega slow fruit juicer I want. Espresso stuff is low priority for me compared to other cooking memes..

shot progresses from acid > sweet > bitter. you'll get a whole lot of value out of getting a scale and using it to stop your shot by weight instead of just timing it - and also weighing your dose each time. doesnt even need to be an expensive scale. can't really help much with diagnosing shots if you arent keeping variables as constant as possible.

typical dialing in would be get your 1:2 (ex. 18 in 36 out) shot in the 25-30 second range via adjusting grind size and then taste. if it's too sour, decrease yield. too bitter increase yield. if its both too sour and too bitter youve either ground too fine and are channeling or your puck prep sucks and you're channeling so you have an uneven extraction.

Yemeni coffee is afaik always natural process, and wild as fuck. These are flavors that often come in those coffees: dried fruits (raisin, apricot, dates), chocolate, squash/pumpkin, tobacco, leather. I've been staying with my octogenarian dad this week and he drinks old school 2nd wave charred coffee and I'm appreciating it more than I used to. You can just sit around all morning and drink cup after cup and it's no problem. It's a bit like beer vs liquor. My habit of starting off the day with 2 cups of high octane high acidity heart attack coffee might need reevaluation.

Yep. It's not difficult. It just takes patience and persistence to get good at it. You can't miss first crack. It sounds like popcorn. Starts as a few random pops, then crescendos into a rolling pop, then slowly fades. Second crack is the threshold of dark roast. The beans go quiet for a little bit, then they crack again, but more softly like rice crispies.

My intuition tells me the Yirgacheffe will taste the best between a light roast (10-20 seconds from the first pops) to a medium (right in the middle of the rolling pops), and the Sumatra will taste best at a full city (darker side of medium, just as the middle of the your rolling first crack begins winding down) and a vienna (lighter dark roast, as soon as you hear the beginning of second crack).

I seem to remember hario airs going for $10 or so somewhere, but my point was more that I'm not sure how much I'd trust some random chink kettle. Both for how healthy boiling water in the thing is and also how long it'd last, ali reviews don't tell you shit and looking up the branded versions of some kettles sold on amazon people complain about the temp control not working or shit like that. I think spending that money on a regular stovetop or electric non-controlled gooseneck kettle and a thermometer might be better. Can't say for sure though, haven't tried any of the ali express ones.

Hario sells more plastic v60s than the rest of them combined. They're pretty good at the whole boiling water into plastic thing. Water is a little different than acidic jagged coffee particles scraping along the inside of an estropress. Hario 304 stovetop will outlast that bodum's shit 430 all day.
