That’s tough. You could try different cheeses. Something more pungent. You could use some blue cheese and buffalo sauce and skip the chicken. It’d still give you the same flavor. I’ve also used Doritos and cheez-it’s to top a Mac and cheese casserole and it can add some zest to it.

If they don't mind spice, hot sauce.
More spices, garlic and onion powder I quite like. MSG maybe? I haven't tried it, but could be good. Adds lots of umami without the meat.
Different cheese blends, you'll have to experiment to find which one(s) you like. I personally don't like bleu cheese, but that mixed with Frank's hot sauce for a buffalo chicken inspired mac'n'cheese could be really good.
Throwing in some mix-ins, like diced tomato, at the end would be nice.
If you need more inspo, think of grilled cheese/melt recipes. Mac'n'cheese is basically a grilled cheese caserole.

thank you for the responses, I will definitely try some of these out later on for myself and judge, but for now I think I'm going to try adding some white wine to the cheese sauce and leaving a lot of cheese on top when I go to bake it in the oven, maybe an extra 1/2lb

Try making it spicy, OP. Personally I like adding bacon or hamburger but the people I know who are Vegan or Veg usually eat a lot of spicy food because it helps with the blandness of the fare. Try adding some hot sauce or some chili sauce or something.

Semen unironically can add a lot of depth to the flavor of baked goods. if you accumulate cum in an environment where it can dry quickly, it won't grow mold or bacteria, it'll enzymatically undergo a flavor-generating browning process. Semen contains sugars, proteins, and enzymes which allows it to experience a similar reaction to the Maillard browning of bread.
After about a week it will even begin to smell like baking dough. Then when you resuspend it in an acidic solution like lemon juice it will add both texture and flavor to desserts like caramel cookies or banana bread.

I did, like two years ago. 30 grams of nutmeg and white pepper each are two little containers. Way too much. The intern who posted the recipe fucked it up was the conclusion that was came to. Not sure how to fix it.
