I picked up a yellowfin tuna steak. Any advice for seasoning or cooking? I was just gonna do salt & pepper, pan sear it in olive oil

I "baptise it" IE barbecue-grill (or pan sear in your case) with just salt then, when cooked, put it into a container with the "baptism" IE flavourful liquid for its rest before serving.
It's basically marinating, but after cooking, if that makes sense.
My baptism for most fish is generally the same: grated lemon zest, fresh lemon juice, grated garlic, lots of fresh-chopped sweet parsley and a bit of olive oil. Simple shit.

Use a generous amount of Cayenne pepper as well as a bit of black pepper/coarse salt. Soak a bit of soy sauce on both sides of the steak then put a thin layer of honey (can even use maple syrup if needed) before pan frying. That's is my fav way to make tuna steaks.

I invented a sandwich that everyone who has tried it really enjoyed. It's pretty simple.
>tuna steak
>texas toast for bread
>applewood bacon
>homemade honey mustard

Cook the bacon in a skillet first. Then get it super hot and throw the tuna steak on for about a minute a side. It's easy and really tasty.
