Making beef broth for the first time tonight. This is little over 3 pounds of bones. How much should I put in this pot…along with onions, carrots, and celery? I’m not sure how much the pot holds… thinking about adding half of them saving other half for later . Will be pre boiling the bones slightly then roasting the bones with veggies before making the stock

pre-boiling is unnecessary if roasting, that's mainly to get rid of the scum, which can also be done by just skimming the top of the pot as it starts to come to a boil

I'd use all of the bones, roast first if you want (or skim) then simmer, lid-on for at least a few hours before adding the veggies. you don't get much out of veggies after an hour or so of simmering, especially if you're using onions skins it just ends up being super sulfuric

spend a lot of time simmering the bones, add the veggies after bones have simmered for a long time and then simmer for no more than an hour or two with veggies, keep a lid on it, if the stock is strong because it's full of shit you can always dilute later as you cook with it.

this is always how we've done it in the restaurants i've worked at, don't be afraid to simmer those bones overnight (or put in a covered dutch oven in your oven at 250 overnight, works even better)

I'm roasting them now.
ALL of them!?!? dang..... i only used half.
fuck... i didnt peel my onions....figured it would add flavor after simmering for a few hours like veggie stock...used from left overs.

argh,.. well im still learning. anyway.... after roasting them at 475 for 20 minutes im going to put them into that pot with cold water and bring to a boil then simmer for probably 5 hours or so, strain, then let cool in my fridge...
thing that sucks though is a dont have a shinwa or mesh ..just a basic colander. i figure itll get the job done for now.
man..... I LOVe the smell of mirepoix on my hands.

Said f it and dropped another frozen beef bone in their after I added the roasted bones and veggies… just gonna skim away now after I bring it to a boil then put it on the lowest heat for like 5 hours idk.

Are we posting cats now? Mine doesn’t interfere with the prep and cook process, and we always wipe down the counters before doing anything anyways.
