I need ideas of what to ask for for Christmas. I could get these things myself, but my gf and family are asking. Looking around $100, but feel free to go over/under.

First for me is a good knife. I've thought about it for a while but wanted to get better at sharpening mine first. Not picky about the brand, just looking for good sales at this time.

Yes, but kato makes what are arguably the best gyutos in the world. I was considering one on ebay for 2k, but the asshole never sent me better pictures of the kanji.

Carbon steel knives are my preferred choice. They're easy to sharpen and take very keen edges. Cheap carbon steel performs very well, while cheap stainless SUCKS.

OK quick question.
What do all you anons think about whether it's lame to ask for gifts or make Christmas lists?
My family did, and I thought it was fine, then South Park made fun of it and I came to find out most people don't do that and consider it weak because you're supposed to develop the social skill of buying good gifts by knowing people and what they like.
When is it ok to ASK to be given specific gifts?

Since people are posting knife stuff here I have a question. I bought a .44 micron shapton glass stone and want a knife that can actually take that fine of an edge.
Right now most of my knives are vg10, aside from an sg4 kikuichi and a cck cleaver. I was either looking at hap40 or a super blue knife next but I'm leaning towards the hap40 if it can take that edge.

Get a straight razor, or 63+ hrc carbon steel from a very good maker.

You only do like 5-8 passes on those stones with extremely low pressure.

I have absolutely no interest in straight razors. I work in a kitchen and I want something to fuck around with mostly. 63hrc carbon steel describes both blades I am considering though.

There's almost 0 practical use for a .44 micron hone. If you like mirror finished edges it will work great. If you strop your edge you can use that hone instead of a strop.

My advice is to take your knife and get it all the way woth lower grits. Then you tip the knife up like .5-1 degrees and use essentially 0 pressure and make 5-8 passes on both sides. You may or may not see improvement, but that's your best shot.

That was the plan. I already take my knives to 10k grit. This is mostly just to fuck around with and see how sharp I can get a knife. I was mostly asking if the knives I own could actually take that edge, and if the others I was looking at could. I know that by that level the steel choice does actually affect if it can take an edge that fine.

Aside from reducing the element of surprise I don’t think it’s bad, I mean asking for or wanting to use a list in the first place shows you care enough about the other person to find out what they would like and don’t already have. Plus it allows coordination between different gift givers so you don’t end up like a newlywed couple with a bunch of Kitchenaide mixers because you though a registry is “lame”.

The people I tend to exchange gifts with all use one of those secret Santa apps where you can maintain a wishlist that your friends can see and you can organize gift exchanges where it automates pairing people up or you can just use the wish lists to see what people want. It's convenient.

I bought a Victorinox for my sister a couple years ago, it's all you need. I would buy one for myself but someone gave me a much more expensive Shin knife as a gift and I'd honestly have gone with pic related if I was buying for myself.
