When I was in highschool, there was this Indian girl that would blatantly flirt with me, but I was too dumb at the time to realize. I was going to make a new thread but I’ll try in here. Can any of you anon’s give me a QRD of the most essential spices for Indian? I have curry powder and paste, cumin, garlic, onion, tomato. I’ve tried to make saag paneer and it came out gritty some how. Also I’m looking for a good replacement for paneer. I’ve tried feta and mozzarella and they both suck. I heard cheddar cubes work but I think they just melt like the mozzarella did. Any help is appreciated. Cheers

You've got two options if you want Indian food anywhere near the ballpark of what you get at the restaurant. The first is you just nut up and buy like 15 spices. There's no "basic spice set;" you genuinely need all that shit. For example, my saag paneer recipe requires: cumin seeds, curry leaves, turmeric, black onion seeds, garlic and ginger paste, and I fry it in seasoned oil which is a byproduct of my base curry sauce which is made from a bunch of shit like coriander, fenugreek, fennel seeds, cardamom pods, cassia leaves, etc. The good news is that most of this is fairly cheap in bulk at an Indian grocer; you can get all set up for like $100.
Your other option is to get the little premixed spice packets like pic related. These are blends of many of the aforementioned spices, and will tell you on the back what other ingredients you need, plus instructions to make the dish. This might be a good option for you if you aren't ready to commit to a whole new spice rack.

Samosas are great. Theyre supposed to be more of a snack or side but they take so much effort that i just make a bunch of them and some chutney and have it as a meal. I like to experiment with different fillings, last time i used potato with tamarind and sambhar masala.

Basically all of the spices in garam masala are things that are just good to have in general for all sorts of dishes. Cumin, coriander, cloves, cinnamon, nutmeg, star anise, cardamom (great for desserts). These are all things that should be mainstays in your cabinet if you like cooking in general. When it comes to more niche spices, it's good to have fenugreek (seeds and leaves), mustard seeds, and asafoetida.

Throw it away. Using generic curry powder/paste for an actual curry is like using ketchup for a bolognese. Garam masala is your core, it's sort of like curry powder but not terrible, it's a solid mix of like 20 different things so you don't have to keep stock of all that shit. Use it as the building block. Your three big contenders afterwards are haldi (turmeric) for meat dishes, jeera (cumin) for veg dishes, and dhania (coriander). Paprika is my personal fix-all, but it is not essential to the mix, and everything else (extra cardamom, mustard or onion seeds, cloves, nutmeg, cinnamon) are also (generally) non-essential and heavily recipe dependant. These are for experimenting with on your own. Chili powder too, obviously add it if you want it spicy but it is by no means core to the process.
Garlic, onion, and tomato are good, but you're missing ginger. Broadly speaking you want to fry your garlic, onion, and ginger in a bit of oil, then when they're all sweated out add your garam masala, haldi, jeera (more haldi for meat-based, more jeera for veg-based). and dhania. Add enough water that it doesn't burn, should be a decent paste. This is your tharka. For saag specifically use ghee instead of oil. Seal your meat or soften your veg before adding your tomatoes and letting it all cook together. Lots of black pepper, some salt, chili if you're using it, done. Again for saag throw in some more ghee if you want it creamy, and you can add a cinnamon stick in with the tomatoes and greens if you like (just stir often or it'll get patchy). Find an Indian store and you can get huge bags of the above ingredients for pennies.
There is no viable replacement for paneer, unfortunately, any other cheese won't work and fuck me I've tried all of them. Good news is saag doesn't strictly need the paneer so you can throw in potatoes, chicken, ham, whatever you have at the time.

Finally for the problem of it coming out gritty you either need less spices overall or more water and a bit longer in the tharka stage. If a recipe comes out less flavourful than you'd like start by adjusting your onion/garlic/ginger first, with ginger providing the kick if that's what you're after. Do this before trying to just dump in more spices.

Today's dinner - chana masala (chickpea curry).

I must admit im unsure about this black cardamom. I expected something like normal green cardamom, but the smell is nothing like that. It smells very strange, pungent almost smells like cigarettes or something. But i didnt notice any ill effect to the final product.

In the west the most common form of turmeric is preground in jars/bags, which is near flavorless. I assume you must use fresh roots to be getting enough flavor to season a dish.
