I don't know what I'm doing wrong.

I've been working on a panettone recipe, made with a stiff sourdough starter, a few doughs and everything.... my bread is ready to bake in about 24 hours, whereas the artisanal ones are said to take 48-72 hours.

Maybe my starter is too active and good?

My results have been good, but not what I'm looking for, and I wonder if rising times are to blame, but at the same time, I don't do anything to speed things up, and I use tons of enrichers in the dough that, technically, should, by nature, make the leavening slower.

Take starter and mix it with some eggs, butter milk flour (no sugar.. Slows fermentation) etc.. Proof 14-20h room temperature, no need to fold. This is sourdough pastry starter.
Next day mix in the rest of the ingredients, butter eggs, soaked raisins, candy orange, flour, sugar.
Bulk ferment 3-4 hours, depending on temperature, fold 3x.
Shape into paper molds.
Leave them outside over night (cca 16h, check them if they are ready).
Egg wash on top, score.
I forgot the temperature of baking, maybe it's 190 or 210®c, 45ish minutes, until almost dark brown.
When done turn them upside down with help of spikes.

I made these, they took 48h to ferment.
needs more raisins and candied peel. the one on the right was misshapen and ended up with a hole in the middle, and they got burnt at the bottom.

Dude, export panettone (like other products) don’t translate its price 1:1 with the ones sold in Italy, they have to add local taxes, import fees and shipping so the final product cost more.
It would be the same if I was to buy an American panettone I’d end up paying 20-30% than the sticker price due to taxes and shipping, at least.

Baladin panettone is made by Albertengo, so quality wise is good and full mid tier, they add the same yeast they (at Baladin) use to make Xyauyu beer which is a very strong almost liqueurous beer (also very expensive) and the final result is that the aromatic profile of the ‘tone is warm and tastes like passito wine, also the raisins are very soft and rich.

Imho it’s one of the best panettone you can buy, below artisanal ones.

I bought a cupcake sized version of picrel a month ago for about $1.50 from winn-dixie of all places because ive seen these threads for years. I’d say i was surprised in a good way because i thought that the common version full of fruit looked like normal bread in cake-form plus random fruit. In reality it had the chewy and more dense consistency of a cinnabon, which was neat and a lot more desert-like.
