TL;DR: at the Ludovico il Moro’s court, from the house of the Sforza (reigning family of Milano), the head chef accidentally burned the sweet he was making for an important dinner and he was panicking, a guy named Toni, who was an helper in the kitchen, stepped in and made a sweet dough using mother yeast sourdough and combined it with leftover expensive ingredients in the kitchen (candied fruit and raisins) then he basically made a panettone.

The reigning family was so impressed with the sweet they called it “Pan de Toni” in his honour, which translates from the milanese dialect into “Bread of Toni”.

From that moment the recipe has been refined and the name evolved from Pan de Toni into Panettone.
