I guess this guy is right, the most important thing is the % of fat. if you can cook the patty in its own fat it becomes something else entirely.

I tried to make a 17% fat burger (cheap standard burger patty here in germany) yesterday but that's just not enough fat. should I start buying fatty steaks and chop them up with a cleaver?
