I started with Rosamonte Suave, which is quite mild and easy to filter, so good for a start
I would also reccomend Cruz de Malta (nice mild grassy taste but a good kick).
for Paraguayan mate Pajarito is usually cheap and I like it a lot, probably the best starter. Indega is noteworthy for the unique earthy note that reminds me of shu pu-erh a bit, haven't felt it in any other mate. Colon is extra smoky, Fede Rico has an interesting creamy sweetness in the later steepings...
I haven't had that much Uruguayan mate, but Del Cebador was great

I think that's it for my reccs cause I haven't tried much brazilian yerba mate

The couple brands that are sold in grocery stores in the US are air dried and organic, i guess they would all be called suave in south america. The weird thing about them is that some of them are not aged because that think that preserves more vitamins and minerals. I haven't tried one in years so i don't know if they are any good.

Its really stupid, the people that got really into mate initially, other than south American immigrants that brought it with them, were all health nuts who decided that yerba mate was more healthy than coffee. Then a few studies got done that said oh btw smoked yerba contains cancer causing chemicals just like all other smoked foods, and they kinda freaked out and now will only buy air dried organic stuff. What is the appeal to yerba mate anyway? How would anons who have tried a variety explain it from the perspective of someone who just drinks camelia sinensis? I imagine there is some variety in whatever notes mate has between brands, but I don't even know what to think in general because I've never had it. The common brands i see in grocery stores are guayaki, mate factor, eco teas. Also Anna Park is really popular in the US but that's not an American brand.
Some other south American air dried brands are mate & co, kraus, i think porongo, and im sure there are a few more.
If you want the facy stuff just get anna park or mate & co.

I yerbaposted a lot here, I didn't start the trend but I simply bought a lot of inexpensive yerba due to the recent price decreases due to the strong USD and probably weak Argentina currency and I assume cheap yerba is why it's popular here at the moment.

Yerba is sweet, upfront and almost soda-like compared to tea. But it's still a plant infusion beverage like tea is.
La Merced tastes like an upfront Dong Ding.
Aged yerba has so many flavors all at once that it's almost sensory overload and normalfags just find it gross. The fermentation makes it fresh bread-like.

If you drink tea and coffee or just open-minded to flavor, you will appreciate the acquired taste of yerba. Taste-wise yerba and tea are way too different to compare but /tea/ welcomes discussion of all plant-in-water beverages minus coffee which has its own general. I drink all three, hibiscus and more.

Gaiwans aren't large enough for yerba but you can gongfu it using a tea infuser basket and a row of mugs or a french press. Steep for 30 seconds or until the water is amber. If water is green, it's too much.

Contrary to what you might expect organic certification is a complex process that is hard for small farmers to get certified. So if you only buy organic teas you will mostly be getting teas from large commercial scale intensive farming operations.
That said if it makes you feel better its not going to hurt, and there is also plenty on non organic tea from these large industrial tea plantations so im not saying organic is somehow worse than the average.
Another way to answer would be it depnds on what tea you are buying, some organic farms are much better quality than others just like with conventional farms.

How many grams are used in a typical session, and is storage of the maté similar to tea? Does the gourd make much of a difference vs a mug? A cured gourd adds flavor and I haven't tried it. Stainless steel, ceramic, glass is fine.

Whatever is cheapest because I am an argie living in Argentina so lolwhatdaeconomydoin. I currently have a 10-pack of Nobleza Gaucha in my closet because buying in bulk saves money, my favorite is Cruz de Malta but fuck the price. I can sympathize a tiny bit. When I first bought and drank yerba 7 years ago on a whim and no research, my first impression upon opening the bag was that it's a bush thrown into a blender. I over-temp brewed it and I just assumed it's a cheap tobacco-tasting grog for people who can't afford coffee. How are you brewing, a standard teapot?

I do sometimes, usually i double the initial brew time and sometimes i get some decent flavor out of a resteep. It depends on how hard you push the first steep and how quickly the leaves give up their flavor. In general i would not suggest keeping the first steep shorter so that you can get a stronger resteep. So just try it out and see how it goes for your tea

Anyways, what are you brewing? Tea bags or loose leaf? Black or Green? What volume (in your mug, in a Western teapot, in a Gaiwan?) and how long are you infusing for?
If your tea is too bitter, you're steeping it for too long most likely. But in order to tell you how long to steep for it's important to know the leaf/water ratio and the type of tea in addition to the temperature. Outside of delicate Japanese greens you can brew with full boiling 100c water, you just have to massively shorten your infusion times.
Anyways my advice without knowing anything is shave about 25% of your infusion time and see if it's significantly less bitter. You don't "need" to start doing anything but unless you can find loose leaf at Costco I would instead recommend seeing if there are any local tea stores that sell unflavored loose leaf (non-blended) at a reasonable price. You should be able to get 100g for $10, or possibly even cheaper. 5g is enough for a day's worth of tea (you can steep it multiple times) and then you just need a $5-10 infuser basket for convenience's sake that either the tea store will stock or Amazon will sell you. You can buy loose leaf from Amazon too it's just way more hit and miss.

I would remove the infuser entirely if you can and put it in your cup that you're brewing tea in. Two small spoons sounds like standard 4-5g of tea, so you'll be doing a sort of halfway between gong fu and traditional brewing. Pour just enough water into your cup to cover the leaves and wait 10-15 seconds for it to "steep" before pouring it out. That should contain the most bitter parts of the tea and mellow out the next steep that you'll actually drink.
Fill the cup up and let it steep for 30-40 seconds before removing the infuser, then let it cool down enough to take a few sips and see how it tastes. If it's too bitter, steep your next steep for 25-30 seconds. If it's just right, 40-50 seconds for your next cup. If it was too weak, do a full 60-65 seconds. You should be able to get 3 good cups of tea out of your leaves this way.
Adjust from there next time you brew - if 30s wasn't enough, the next time you make tea go for 40s. You'll eventually get a feel for it.
As for water temperature for black tea, let it reach boil and then let it sit 30-60s depending on how much thermal mass (water) is in the kettle. That'll help it cool down to the 90-95 range and pouring it into your cup will do the rest.

Nixing clays are riverine clays that are wheel thrown. They have a unique color-shifting effect that I don't believe is very well documented as to its causation. There's some ideas about certain teas are more suited to the teapots made in the regions they come from, but I'm more convinced that clay generally just tends to be clay. Yes, lapasang is usually smoked with pine, which i think is different than the woods they use for yerba so it will have a little bit different smoke flavor. Lapsang is really good, it has a rich smokey flavor and the tea itself is smooth and mellow. Really enjoyable stuff.
