3lbs beef chuck roast cut into 1" cubes
1 onion
clove of garlic
half dozen arbol
4guajillo
4ancho
half dozen dried habanero
cumin seeds
deseed chilies (bitter) and toast in dry skillet or oven until fragrant (about 3-5 min) place in a pot of hot water and let soak for 30min then drain water (also bitter) add to blender with some beer or broth and blend into a puree
In large cast iron saute onions and garlic in some bacon fat then add the beef and give it a quick sear then deglaze with wild turkey 101
add pepper puree and a little more beer or broth then simmer until beef is tender, thicken with masa if needed and serve topped with fresh cilantro

It's good but its peppery beef chunks and kinda boring after awhile
Home style chili with beans, tomatoes, fresh peppers, ground beef and pork sausage is a more interesting meal with more textures and variety in flavors and ability to customize

Here's mine

>1-2 lbs ground deer or bison
>2 cans tomato sauce
>2 cans tomato paste
>2 cans diced tomato
>3-6 garlic cloves
>2 green bell peppers, 1-2 red bell peppers
>(optional) 1 onion
>chili seasoning (I like shotgun willie)

Simmer the tomato stuff in a pot. Brown the meat and add to the pot. Cut the garlic and peppers (keep whole chunks of garlic,not minced) and sweat in a saucepan, then add to the pot. Add seasoning, simmer for 8-20 hours.
