It's not. It's Ethiopian. Good coffee, shitty spongey sour bread and curries that are a budget version of Indian curries. Also there's a shit ton of them everywhere in DC, and they all serve similar stuff. The really cheapass places will mash up the bread to use as filler in the meat dishes. The meat and vegetable curries are fine I guess, but as mentioned other cuisines do them better.

Japanese, easily. Their entire cuisine is over hyped because of some fake notion of artisanship or mastery or whatever bullshit they feed you. Go to literally any decent restaurant anywhere in the world and you'll find just as much passion and care but without forcing some poor kid to wash rice for 30 years to inflate a boomer's ego.

Basically every other raw meat dish is better than the shit the japs serve. Ceviche, aguachile, tartare, carpaccio, larb. At least they season it so it actually tastes like a distinct dish.
