this surprisingly influences many of my cooking choices, especially late at night. I live in a 2-storey townhouse now without side windows, so although I have lots of good options for cross-breeze, (front and back doors, lots of windows including upstairs, cooking smell just lingers in here more than most places I've owned.

That said I do have a monster industrial floor fan. Should probably start using it to clear the cooking odour out of the place as I go. Also not idea at 2-4am.

I often get lumps because I'm not great at this stuff but I've never had a roux-based sauce break on me. Also depends on the cheese, pre-shredded or grated cheeses are dusted with cellulite which does not melt into sauces, it basically forms microplastic beads instead (non-toxic etc of course)

You did nothing wrong. That's just how bacon is. 90% of it is just water and fat, so it all renders down during cooking.
I love bacon but I rarely cook it now because of this.
