Instead of a stone I see people using baking steels. Instead of a baking steel can I not use a stainless steel pan? And instead preheating it for an hour in the oven can I not just do it on the stove in 3 minutes?
Why do they call it preheating. Pre means before right? You're already applying heat. Pre heating so before heating would be like take the pan out of the drawer because that's what you do before you heat it.

a stone takes long time to heat up. a stainless pan won't so obviously you don't have to leave it in for an hour. is the pizza very small or is your pan big? I don't know how it turns out if it goes up on the sides a lot. other than that I'm guessing it should probably be better than a regular tray

A good steel weighs like 30 pounds. It holds and transfers a lot of heat because of its mass. A steel sheet pan doesn’t compare. My pizza steel reaches over 500 degrees and after the oven is turned off it will be too hot to touch for hours. A steel cake pan can make first rate Detroit style, though. You can get a stone that works pretty good at WalMart for like 15 bucks.

Literally all you need is a few unglazed ceramic tiles. Works as good, if not better, than a pizza steel or stone for pennies sold at the hardware store.
