It's becoming more mainstream knowledge by the day, but 50% of what seperates normal popcorn from movie theater is flavacol salt, which you can buy off amazon. A little bit goes a long way, start small and add up to taste. Most theaters use 1 tablespoon for 32oz of seed, which I doubt anyone is making that much at home unless they have a professional grade popper and are feeding a shit ton of people. The other half is what oil it cooks in. Highly recommend coconut oil, although I like corn oil too. Canola and Coconut/Canola blends are what most theaters use. Use about an ounce of oil per 3oz of popcorn seed. You should stop cooking popcorn when you go more than 2 seconds without a pop. Optimal temperature when cooking in oil is roughly 420 degrees fahrenheit.

Get some flavored butter to throw on top if that's your thing and you're golden.

One time I went into a movie theater with sunflower seeds on me, and ate like two cups worth of shells. When I got up to leave I dumped them on the floor for the movie wagies to clean up.

do people actually put faux butter (or any butter for that matter) on their popcorn at the theaters? or is it just some TV thing? I can't imagine just sitting there for two hours with my hands covered in oil, just imagine how disgusting those seats must be

I don't like to pour that fake butter oil stuff on it. Seems to make the popcorn texturally less pleasant and, as you said, makes my hands oily af.
What I do, and I know /ck/ will likely shit all over these, is one of two things:
1) pop my popcorn in ghee; all the butter taste but for some reason, not as oily/greasy feeling as dumping the stuff onto the popcorn directly and the texture stays light and delicious; this is expensive, though, which leads me to
2) air popping my popcorn and spraying it with butter-flavoured baking spray. Adds that butter taste, doesn't ruin the texture and isn't remotely greasy/oily.

>>18531650
There's also
3) use normal oil spray on air-popped popcorn and add stock powder instead of salt for flavour. The spray helps the stock powder to stick to the popcorn. Tomato popcorn done this way is delicious as are tamarind popcorn and chipotle popcorn (if you can still find chipotle stock powder).

My dad is half Asian and he got my nan's Asian parsimonious outlook on life. Used to make us take snacks to the movies in our jackets and not buy us anything except for the occasional drink.

What can you do for air-popped corn? I know you can get some powders but my experience those is that it barely sticks. Don't want to cover them in oil/butter either.

I actually recently rendered some ghee specifically for this purpose, but I was surprised to find that the popcorn I've made with it doesn't really taste strongly of butter to me. Could be that I just need to use more, or it could be that the "buttered popcorn" taste memory I have is distorted by the unnaturally strong concentration of butter flavor found in commercial popcorn topping.

>> No.18532077

>>18531946
It's the second one. Flavocol is quite potent. There's "butter salt" if you want a stronger flavour or you can use homemade ghee, which tends to taste more buttery than shop-bought, likely due to freshness, I would guess.

>>18531931
I've popped a few things but never sorghum. I may givvit a go some day.

>>18531919
Eep.
A friend while I was at uni worked for a "gourmet" popcorn place. Popcorn was flavoured to order from any of dozens of choices. Blueberry was not one of them, though we found that, oddly, combining cookies'n'cream and barbecue flavours made one of the most delicious varieties we'd had. Best individual flavour was still the OG: butter really is better.

use ~3 test kernels to gauge how hot the oil is, only pour the rest of your kernels in after those 3 have popped
once they're poured in immediately remove them from heat for 30 seconds
