Can anyone explain why NYC Pizza is so much better than pizza elsewhere? Except Chicago Pizza, which is also good. Is it the quality of the mozarella? the freshness of the bread? A part of it is the water, regional water differences affect the characteristics and flavor of doughs made with it. NYC has very nice water. Besides that, a lot of other varieties like Connecticut style make their pizzas doughier, and if you don't prefer that then NYC will suit you best. I also think that because of its ubiquity it's hard to get bad pizza in NYC, it's something NYC is so known for and everyone knows what it should taste like. Places selling bad NYC pizza aren't going to last long.

New Yorkers have higher expectations. Its not like there isn't good pizza elsewhere, its just that in New York they wont tolerate even the buck-a-slice shit being anything but good. American style pizza developed there, and the goyslop version delivery stuff came after.

Everywhere else(except Conneticut and New Jersey due to proximity) got Pizza as a mass market convenience food. I went to Vancouver, Canada. Big city, like 3 million people in the metro. Probably one good pizza place per 250k peeps, and almost all of them are an Italian rather than American style and expensive as fuck.

Most pizza is overpriced wood fired copycat Neapolitan shit, good New York or Chicago style pizza is nonexistent (to the point I make it myself out of sheer disgust from the lack of options here). I live in Canada where for over a decade I was wondering why all the pizza is shit and can't match some random pizza I got ordered from my cheap motel one night in new york.
I have figured out 60-70% of it.
The trick is to order thin crust AND lightly done/underdone.
With this trick I can order from some bottom barrel chain like pizza pizza and approximate 60-70% of what I loke about ny pizza.
