If you don't care about health, just trim excess fats off meat and render, then you can just strain and jar it up. Pork lard was commonly used in Chinese cooking. Id collect cuts and freeze them until you got a good volume. I'm not sure if it can take as high a heat but I don't think you're doing extreme wok cooking on a home stove anyways.

a hot wok needs an oil that doesn't break down easily. Peanut oil is the preferred for wok cooking. I use exclusively olive oil in my house, but I have extra virgin for salads, a zesty rich green. The cooking olive oil is from Costco and it's much lighter in flavor.
