I didn't take a picture. It looked like cake. It was terrible. I tried to make soda bread and to be honest had no clue how to mix it.

>1 Cup Coarse Wholemeal Flour
>1 Teaspoon Baking Powder
>1 Teaspoon Bread Soda
>2 Cups Buttermilk (i tried to make vegan buttermilk)

Place ball of dough (slightly flattened) on a lightly greated/floured cookie sheet and carefully cut a five pointed star on the top of the bread. If the sound is somewhat hollow, then the bread is finished baking.

Honestly there are a lot of parts that could have gone wrong here. I tried to make vegan buttermilk but it didn't thicken up at all. I had heard that cups are dumb measurements for flour and looked up weight estimates, but it was nowhere near enough to get dry. I got bored of mixing and adding in flour eventually and just put it on the pan still sticky. I am a bread brainlet.

That’s where you went wrong. From what little I know, the whole reason you use baking soda in soda bread instead of yeast, is because when it mixes with the lactic acid in buttermilk, that’s what creates the levening effect in order to make the bread rise. Without it, you have no chemical reaction and something that looks like >>18388871

My honest advice is to... firstly perfect your vegan buttermilk recipe. I'm sure it can be done with correct times/temps, but be on point about it before trying to replace something essential to the recipe.

Secondly I think you took being careful to not over knead too seriously. The dough does not look fully homogenized, which means you under kneaded. A combination of the the two probably resulted in your failure.

Thanks for the tips. I'll probably revisit the vegan buttermilk - I get the idea this is possible, because I've now looked up straight up vegan soda bread recipes that suggest similar things (soy milk + lemon juice or apple cider vinegar). It would be neat to make a non fucked up version of this.

I also didn't use unsweetened soy milk - I wonder if that would have affected the acidification of the buttermilk? Honestly, part of my trouble is I've never seen real buttermilk, so I don't have a good frame of reference for what the consistency should be like.

No no. Search online for buttermilk starter or culture and use that. The bacterial culture does so much more than produce lacfic acid.

Also if you love your vegan buttermilk you can use your batch as a continuous starter.

>8g salt
>1 small pinch yeast
Mix, cover, let sit for two hours at room temperature. Then in the refrigerator for between 12 hours and 2 days. Then take it out, shape it, proof it, and bake it.
