The texture isn't the best, as a result of the manufacturing process where they're thoroughly overworked along the inside of a steel drum while drying out. It's way too gluey. If you can find the refrigerated stuff it's a way better texture. Don't try that Orida steam&mash shit though, it has a really weird artificial flavor to it.

I don't think it tastes as nice as homemade mash. Literally the only reason I don't use it like that.
However, I do use it to make other mashes IE I'll boil a head of cauliflower, mash it up with butter then add potato flake until it has the consistency of mashed potato. Also nice with other vegetables, like carrots, parsnips, parsley roots (or any combination of the three) and beetroot.

What mess?

Boil potatoes.
Drain water.
Mash potatoes in the pot with butter and/or milk and/or cream.
Salt to taste.

vs

Boil milk/water/butter.
Pour in flakes.
Whip until combined.
Salt to taste.

It's the same number of steps and uses the same number of pots to prepare fresh vs instant. The only difference is the time (instant can be made as soon as the liquid boils while fresh must be cooked enough to get taters to mash consistency) and the energy (a dozen or so up-and-down motions with a masher take more effort than stirring a whisk a few times) but the results are worth it, IMO.
If you, however, disagree and feel the time and effort aren't worth it, that's fine, but to argue that it's messy and requires more clean up is just silly.

Yeah, the press can be difficult to clean if you don't do so immediately. I have one and wash it as soon as I'm done using it, otherwise the starches gunk up the holes and make it a PITA to clean. I don't use mine for mash, though. I use it to make passatelli and long spatzle.
