It's actually more typical for North Holland, the German coast and Denmark, though we love them in Belgium and the Southern Netherlands too. They're virgin herring (maegdekens in old Diets language, hence maatjes today) , probably the fattiest fish you'll ever taste.

You can get them year round but the new ones in June "Nieuwe Maatjes" are best, because they're least salted and purest in taste. You grab them by the tail and eat them just like that, with artisanal jenever after (if you can find it).

"Tagliatelle al ragu" doesn't exist. There's ragu Bolognese (beef and tagiatelle), ragu Veneziano (bigoli with duck, not papardelle), ragu Veronese (polenta with horse meat), ragu alla Napoletana (penne, chunks of meat and sausage). There's lentil, boar, rabbit, porcini ragu.

Also, to OP, bacalhau is not only southern Portugal, it's typical everywhere since it was never dependent on proximity to the coast (is is salted for preservation)
