Or you could have all the exact same flavors with regular meat and not have to eat the garbage off the butcher's floor. Szechuan spicy fish soup, szechuan chicken soup, etc, they all have the exact same flavor components. Szechuan food is good but pretty much all tastes the same.

I'm not a great fan of the sausage and blood slices by themselves, but the offal unironically has an interesting texture
I haven't had a better Sichuanese dish, but am open to suggestion. I also like Polish tripe soup, and ofada from Nigeria, so I suspect they're part of the flavour somehow.

and try dim sum, the taste is mild and elegant, they are steamed instead of fried
Cantonese food is pretty good, relatively low fat, and its fried rice is "dry", as in, you hardly see any streak of oil left on the dish after eating, that's a great sign of a great chef as well

Although the authentic one has those things that are like small eels in it, and they're shitty.
All the dishes where they use the hot pot base are good. Especially the beef one. The flavour of the green Sichuan pepper is so great.
