Can I get a brief rundown on the cleaning process for different chinese teas?

You don't need to rinse most tea. I would do closer to 10-15 seconds than 30.
I really only rinse puer and other teas that can get dirty so to speak. Its not needed at all for black tea green tea etc unless the first brew has a little off taste that you want to try to remove, then you can give them a quick 10-15 secind rinse.
My technique is just putting my tea in the warmed gaiwan, adding water, swirling it around for a few seconds and then dump that water in my sink/waste bowl. If im not using a gaiwan i will just put my tea brew basket in my mug, fill it half way with hot water. Enough to cover the leaves, then pretty much immediately dump the mug out and then fill it with water for the regular brew.
A lot of people rinse more as a way to warm the leaves and make the first infusion brew faster than any need to clean the tea.

How do (you) make tea? I just make water hot with an electric kettle, pour it in a mug with a tea bag of whatever I feel like drinking today, and let it steep for 10-15 minutes before I stir in a little sugar/honey and drink it.
I'm curious about making tea "the right way". I believe it's an autistically specific temperature for an autistically specific amount of time. I know that memorizing a few temperatures and times isn't too hard, I'd get that down after making 5 cups, but how do you know what temperature your water is? There is a pretty extensive guide in the pastebin but it kind if sucks.
The only time you really need to use cooler water is green tea and some very green oolings, everything else you use boiling water. I cool water by running my electric kettle and then waiting 5 minutes after it turns off before i pour it.
Many of the people that post here just put tea leaves in a mug and add boiling water, just keep the leafs in and drink it when it cools, add freshly boiled water when you drink 2/3 down to make a second cup with the same leaves. Its called grampa style brewing.
If you want to take the tea out after brewing 5 minutes works fine for almost everything.
The other way that people like to brew is gongfu. Small cup, lots of tea, 5 second brews over and over.
The write up for that is good in the pastebin so i wont repeat it

From my autism research I read the perfect temperature is 80-85 Celsius for green and 86-89 C for black. The logic is the water should be hot as possible (but not so hot to damage the antioxidants) to make the tea as quickly as possible so the aroma doesn't cook off. So 15 minutes is too long. 3-6 minutes is enough depending on your tolerance for astringency and the particular tea.

I just poke a digital thermometer in my mug before dunking the tea in it. No fancy kettle.

>> No.18381857

>>18381405
The "rinse" is more to help the tea open up not really to clean the tea. You can just add a bit of extra time to you first steep instead to serve that purpose (which is what I personally do). If your tea is visibly covered in filth then you probably do not want be drinking it anyways, rinse or no. Maybe a rinse will actually help with extra skanky heicha but again I would say if it's beyond your comfort level to drink it without a rinse then you may want to reconsider drinking it with one. If you are lucky enough to own a cake old enough to have surface dust you should get a brush. That's really kind of an edge case though.

>>18381569
>Alright thanks. I thought it was to remove the fishy smell
In my experience if the tea tastes funky first brew it's going to keep tasting funky throughout. That sort of taste generally doesn't seem to just wash off for me at least. For example shou is typically going to have the taste of wet dirt, it is just intrinsic to the tea due to how it is made. Some people are going to disagree with me and prefer to rinse, that's fine to, do what works for you.

>>18381650
>I try not to leave wet leaves in a gaiwan for more than 12 hours.

>>18381799
>I'm curious about making tea "the right way".
There is more than one "right way" to make tea. It depends on the tea and what you are tying to accomplish. Even then temperatures, times, and the like are more of guidelines than things you need to hard and fast memorize.

>how do you know what temperature your water is? It doesn't look like many kettles have thermometers on them.
While you don't necessarily need one. I have a electric kettle that I can set the temperature and have it maintain the water at that temp. You can buy them online and they are not exceptionally expensive. Again, they are a luxury and you don't need one to make good tea.

I see, I always thought if I steeped for too short a time it'd be weak tea and I wouldn't be able to taste much. How long would you steep a 32oz tumbler? I drink a lot of tea at work in that and I always let it sit for 20 minutes, though it's more to let it cool to a point I can drink it than for taste.

>> No.18382071

>Some people are going to disagree with me
It depends what you mean by the tea staying funky. I definitely get less (not zero) fishy taste from shou on subsequent brews, so a hot rinse is basically "brewing 0.5" and takes away the absolute worst of the fish taste.
>>18382034
>if I steeped for too short a time it'd be weak tea
It is entirely relative to the tea to water ratio. Gongfu steeps for a few seconds for the first brew.
>How long would you steep a 32oz tumbler?
Steeping longer isn't the answer to a larger container (it would taste overextracted, and possibly weak ironically), you use more leaves. It isn't wasteful, if you don't overextract them you can use them for a second brew.

Anyone tried Kava? It's a root and herbal remedy that apparently helps with anxiety and can be used as a substitute for alcohol.

Made some of it today (blended some tablespoons of it with water then strained it) and I'm not sure about it. Kinda feel relaxed but not like with alcohol. Not going to have any alcohol tonight as it says mixing it with alcohol is quite bad for your liver.

Any inputs on this? Watched some youtube videos of people swearing by it.

>> No.18382307

>>18382152
It has an effect not unlike alcohol in sufficient doeses. I find it interesting and fairly fun but i guess it could become habit forming if used regularly. There is some controversy as to whether or not long term use of kava can cause liver damage or if that's the result of the kava being cut with other plants from the same family, luckily the better quality vendors do batch testing so adulteration shouldn't be an issue.
The first couple times i tried it it didn't seem to do much, some sources seem to have dramatically more potent kava than others, i had good luck with kava from krakenkratom and root of happiness.
It seems like you need to blend it for a long ass time or even do that elaborate brewing thing with the mesh bag to really get everything out of it. I see people using liquid emulsifiers to improve the extraction process.

>Whats stopping farmers from adding trace amounts of flavoring to their tea?
It's not impossible, but added flavorings don't tend to mesh well with the natural tastes and they will likely wash out of the tea faster than its intrinsic flavor. A lot of teas have a well understood range of flavors and adding something too unusual would make it obvious. The main tea I have seen accusations of unlabeled added flavorings is milk oolongs. I have also seen accusations that some unscrupulous dancong producers add flavoring but unlike milk oolongs I have never seen anyone actually call out a particular vendor or product on it so I don't think it is that common. Dancongs are know for their difficult to achieve floral scents so I can see why the incentive to cheat would be there.

since i just went autism price shopping on them.
First of all the cake series used to be called tea spirit until the name change in 2014 then they changed it back to tea spirit in 2021. Anyway the one on fullchea seems to be the best price.
if you want a younger cake tea-expert has the 2021 version pretty cheap. $50 but its a standard size cake and not 500g

KEK, that's kind of awful. My guess is that he ether drop ships or keeps a very lean inventory therefore when his supplier raises the price he immediately does so as well (plus markup of course). Additionally, he probably misses out on volume discounts.

I know, KTM just never seems to win me over when I am putting together possible orders. If it weren't for post-covid shipping costs I would have ordered from them by now. Mylar bag isn't terrible, but it's probably dried out. You're supposed to store it with more humidity, and it shouldn't get too cold. ~70 is fine imo, but you're going to have to take better care of tea in the west. Stick it in a plastic box with a cup of water, or get a paper towel wet, stick the paper towel inside a plastic bag, and leave the top of the bag slightly open, and stick THAT bag inside your mylar bag. You shouldn't get the tea wet though, so be careful.
Your tea might just be old though, sheng goes through kind of a boring phase in the 2-6 year range where all the youngness goes away but it hasn't developed any other flavors from aging. Farmer leaf especially focuses on showcasing the flavors of young sheng. I don't mean that he processes too green, I just mean that that's the style of tea he shoots for.

I'd keep it fairly warm and moist for around a week and see what you think, it'll be a fun experiment either way. Don't go over ~70% RH, but I doubt you can accomplish that without special tools anyway.

Not sure if it will get back to how it was before but maybe give it some time, it could also be going through an awkward phase in aging.
With a glass of water you are risking moisutre getting onto the cake which will then grow molds i would really not do it.

Looks like he ships those in decent bags
Anyway yeah you generally want to keep the humidity above 45%-50% and below 65%.
Don't put it in a box with water, just find one of those boveda humidity packs cheap on ebay or amazon, the 58% ones are a good choice,
Anyway just close that in the bag with the tea and leave it alone for a weak or two and see how it goes.
I should also mention if it was really young puer when you get it and its now 6months or a year old it could just be the natural evolution of the teas flavor over time. There is a whole debate over very green processing making tea that tastes great initially but gets bland as it ages.
If you want to get deeper into puer you should set up a pumidor to store your yea so it doesn't dry out too much. Teadb.org has some good info about them

The real nuclear bomb is that storage probably doesn't matter that much, beyond the actual known detriments, like light, really dry air, the tea getting wet* etc. Yeah, I imagine wrapping your tea is fine. The bing itself is basically a boveda pack, it'll "breathe" and control humidity. If your tea is already too dry though, wrapping it won't do anything. I don't use a pumidor, but sometimes I do chuck tea in a more humid environment for a while if it suffers during shipping. If you don't notice any issues with your tea, I wouldn't worry about storage. I'm not convinced anyone has successfully aged tea in synthetic storage, and I'm even less convinced that it's possible for it to be economical, compared to buying tea from a professional like the vampire or similar.

Yeah, this'll keep moisture up and prevent the tea from drying out. It won't help age the tea, but it'll stop it from tasting flat.
>His actual conclusion is clearly that tea is going to age like shit in places that don't have climates similar to sothern china
This is my experience as well, but storing tea for aging and storing tea just to keep it from degrading are two different goals.

Just to make sure we aren't talking past each other here when i say pumidor i just mean a closed box or whatever that will keep the tea from gettin below 50% humidity in my dry winters. I know people were working on crazy hotbox setups with 80% humidity and heaters but im not talking about that.
I actually have good luck just keeping my tea on a shelf in my living room for most of spring and summer because its hot and humid a lot of thr time. But during the winter humidity gets down to 35% or lower here

>/tsg/ needs to stop telling people to spend money every time they have a problem.
I get what you are saying and generly agree with the concept but I think you are overstating the problem here.

For example I am totally comfortable saying heicha beginners don't need to worry about storage much besides generally keeping it sealed. However once they are interested in storage and have a sizable quantity of tea I don't see why not to mention things like Boveda packs. The people who may hesitate to spend a few bucks Boveda pack tend to be the same sort of people who would be most devastated if their whole tea stash got moldy and had to be tossed.

>more tea has been drunk from a box with a glass of water in it than you've ever seen.
I never seen anyone doing that. Too easy to spill. The typical cheap thing to do is to use broken ceramic shards in a cup with a spritz of water as ersatz humidity beads.

I also disagree with your accusation that /tea/ tends to push a lot of expensive gear to beginners. Typically the only thing I see pushed to true beginners is cheap strainers and gaiwans. I at least try to temper my recommendations based on the perceived experience level of the anon that asked for help. Do you truly think that if someone comes asking for a solution to a problem and that solution costs money we should just ignore them?

Because he lives in HK. Storing tea in Germany isint his problem. Saying don't worry about it is a very pragmatic thing to do when you run an english language tea blog mostly read by westerners. People wouldn't be happy if he just said live in HK if you want to store tea properly duh. But again he hasn't given it any thought because its not his problem.

>Just to make sure we aren't talking past each other here when i say pumidor i just mean a closed box or whatever that will keep the tea from gettin below 50%
Okay, this isn't a pumidor. A pumidor is specifically a humidor for tea, humidors are temperature and humidity controlled. That's their defining feature.
If your tea used to be good and now tastes flat, it might have dried out. Sticking it in a higher humidity environment might re-envigorate it and help it taste good again. A way to create a higher humidity environment in minutes with zero tools is a glass of water or a wet paper towel in a box.

Wow, your personal experience is surely representative of all of tea culture, you are very smart. I won't link you more posts that talk about sticking a glass of water in a cupboard or wherever because one should be plenty.

We are not TALKING about storage, anon has seventy grams of a single tea that MIGHT not have been stored properly. If he had asked "How do I store all these cakes to keep them from drying out" I would have sent him to boveda packs. All I told him was a way to TEST if he needs to worry about storage in that could be done in three minutes with zero dollars with effectively no risk.

I don't know how this is something that you guys missed, but we are not talking about storing tea. We are talking about testing if he needs to adjust his storage. It might be totally fine, mylar bags are pretty good. Why the fuck would you buy boveda packs and a hygrometer to figure out that it actually doesn't matter at all, that you don't care about storage, and that you're just going to leave your tea in mylar bags and not worry about it, the way god intended.
>Hey I left my tea with a glass of water for a week and it's way better now! Great! What do I do?
Buy a bigger box and boveda packs. You don't need a hygrometer unless you're pushing ~75% RH at higher temperatures, but if you're storing ~$500 worth of tea then they're not that expensive for peace of mind.

Okay i see where the disconnect is.
We are basically in agreement that people in the west arent going to be aging tea and recreating something like traditional hk storage at home. That trying to do so is stupid and a good way to start a mold farm and that the goal of storing tea in the west is mostly to maintain its qualities and not to actually create the same conditions as some tea vendors warehouse.
We just have slightly different opinions on what that storage should be but not even significant ones.

Anyway so what the hell do i call keeping tea in my living room? I associate the word storage with hk storage and also associate aging with the tea going through some sort of transformation. If I'm talking about something I've had for a while, I'd just mention how long it's been in the west. I don't think it's too different from stuff that's been in Detroit for a long time, or whatever else NA vendors are doing. If you're not doing anything particular, yeah, I'd just call it home storage. It's gonna be dry storage pretty much no matter what, as much shit as Kunming gets for being too dry, it's moist and warm compared to NA or Europe. I don't think there will ever really be a word to refer to it, since it's not really desireable. The only reason anyone ever talks about HK storage or Guangdong storage or wherever is because it's marketable, it increases the value of the tea. Same with Gushu, and shengtai, only really became a thing once people started caring about pesticides and heavily pruned plantation tea.

Rooibos is pretty good, honeybush is worth trying as well if you're looking for something a little different. I've had a lot of fun experimenting with chamomile, if you do shorter brews, around one minute, you can brew it at a much higher ratio than normal and get some interesting flavors out. If you have whole flowers, it's worth brewing it quite strong. Even if you don't end up liking it, it has a very unique flavor.
I dunno if I would say it helps with pain, I've consumed a huge quantity of chamomile before and it didn't do much. Around forty grams in a sitting, brewing it in 300mL at a time into a mug.

If you have pruning shears you can cut them into chungs before brewing. Otherwise take about a half inch piece, stick it in a brew basket in a mug and fill the mug with boiling water, wait 15 minutes, drink the tea in the mug, then chop up the now soft root with a knife, then brew that for another 15 minutes, drink that tea and also eat the hydrated root pieces if the mood strikes you.
You could also boil a mug or twos worth of water on the stove, put a half inch piece in, tun the heat down to a low simmer, wait 10 minutes, take out the piece of root, chop it, throw it back in the pot, simmer another 10-15 minutes, then strain out the root pieces and drink. They really do work quite well if you get the right size but are kind of pricey if you need a bunch of them for different containers. I have a calibrated hygrometer and the Boveda packs are accurate in a sealed container. You can actually recharge them by putting them in a container with higher humidity then themselves. Not sure what you find suspicious about them. Again, my only real complaint is cost.

If you want to know the more technical explanation check out these guides for making DIY 2-way humidity regulators that work on the same principles.

Your grocery store probably sells constant comment which is nice, especially in winter
Don't use distilled water for tea, use spring water (or just use tap water) distilled water makes tea taste weird. Anyway you really don't need to worry about using special water unless your tap water tastes disgusting or you collect fancy teas or something.

It will take a few days to pick up some moisture.
Anyway what year was it pressed? Was it pretty fresh when you first got it? It's reasonably likely that it was just processed in a way that really accentuated the fresh tea and now that its getting a bit older it doesn't have those very young green notes. But give it a few days and see what happens. Sometimes the best thing to do for a tea that tastes a bit bland it to seal it up and forget about it for a while.

Among herbals, try mint, chamomile, licorice, lemongrass, lemon balm, hawthorn, bilberry leaf, and honeybush and GREEN rooibos if you haven't had them.

Okay Im working on rewritng the puer storage section for the pastebin, how does this look?
>Pu erh: Its best to store in a cabinet or on a shelf away from direct sunlight. Pu erh, like any tea, picks up smells easily so avoid storing it near anything with a strong scent. You can store in pretty much anything as long as your pu erh won't pick up the scent.
>You will not be aging tea at home and getting the results of some humid Hong Kong tea warehouse. The goals of storing puer at home should be to protect the tea from strong odors and to keep it from getting too dry or too wet. You want to keep the moisture level in the cake over 45% and below 65% give or take. There are a few ways to accomplish this, One of the easiest is carefully wrapping the tea in several layers of plastic wrap, this will help maintain the humidity in dry climates but It is annoying if you want to access that particular tea regularly. Another popular method is storing the tea in some kind of plastic container or cooler, you can add some boveda 58% humidity packs to keep the tea from drying out, this method leaves the tea more accessible if you are going to be drinking it regularly. Depending on your climate you can also just leave the tea on a shelf somewhere.
>Avoid storing tea in a high humidity environment like a damp basement or bathroom and in general, check for bugs and signs of pests trying to get in to your stash (nibbled wrappers, spider web, etc).

>You want to keep the moisture level in the cake over 45% and below 65% give or take
RH is pretty hard because it isn't an absolute measure of moisture, it's a holdover from meteorology where we really only care about condensation and rain. 65% RH at 50F and 80F are extraordinarily different moisture levels. Personally I'd say 45% is quite low at room temperature. The only people who are getting mold on their teas are pushing them really hard at ~75% or over and high temperatures, or don't have enough insulation and their sealed storage loses temperature too fast, and has no way to exchange air the the RH spikes.
I'd pretty confidently say that if you can hold 70% RH you're gonna get no mold, I wouldn't worry unless you're thinking about crossing that mark. If you can keep your tea at a high temperature (70-80F), you're in a much better place overall in terms of avoiding mold, since humidity swings won't be as severe, because they require more water in absolute terms.

Now that I think about it, I probably wouldn't make any changes to your post. If people aren't gonna read about this stuff on their own, they're gonna mess it up. 65% RH is fine, although under 50 is getting to "drying out" territory imo.
Ever thought about a wiki? Might be easier to organize than the pastebin, it's getting pretty big.

This does remind me that i should mention avoiding dramatic temperature swings due to the risk of condensation.

my suggestions are probably kind of nitpicky or excessive so do with (or don't do with) them what you will. I feel like to properly explain some of this stuff you would need to expand the section a bit but it would not be fair to ask you to do it because I am too lazy to do it myself.

>You will not be aging tea at home and getting the results of some humid Hong Kong tea warehouse.
the way that is written makes it sounds like Hong Kong storage is the only correct way to age puerh which I at least don't agree with. If it were me i would probably reword things slightly.

>You want to keep the moisture level in the cake over 45% and below 65% give or take.
>boveda 58% humidity packs
58% packs is probably not a bad for extra cautious recommendation but I personalty use 65%. 65% (or even even a bit higher) humidity appears to be safe for long term sealed storage so long as you don't have rapid large temperature fluctuations which could cause dew. Though I figure the last point is probably why you picked 58% because they allow for a greater margin of safety. Also I presume you just did not want to mention the concept of dew point at all.

>check for bugs and signs of pests trying to get in to your stash (nibbled wrappers, spider web, etc).
You could add hard freezing for a week is an an effective way to kill pests you just need to watch out for condensation on the defrost. Probably not necessary though as pests in stored puerh don't seem very common if you keep it sealed. Also for the sort of bugs that are most likely to actually eat your tea (cigarette beetle, drugstore beetle, or certain dermestid beetles) frass (bug poop) is probably going to be you first sign besides the beetles themselves and possibly a few small holes in the wrapper.

I doubt any of this is very useful but I spent far too much time typing it up to not post it.

Most of the teas that have a reputation for cha qi are pretty pricey.
This is probably one of the cheaper ways you can get "old tree" tea in a smaller quantity.
