there's ground beef, pork, chicken, turkey, etc
but why isn't ground fish a thing? just mulch all the bycatch up
closest thing would be like imitation crab but that has a lot of stuff added to it

Because you [likely] live in Ameriland, as evidenced by your use of the term "ground" v "minced" and your inclusion of turkey as a commonplace meat.
The reason it's not commonly available where you live is a simple matter of supply and demand: just as turkey mince isn't commonly available where I'm from as there's not really any demand for it, fish mince isn't commonly available where you are for the same reason.
Were there a greater demand, sure enough, someone would provide it.
A note: in order to run fish through a mincer effectively, it's best to salt it first to leech out some of its water. This firms up the flesh so that the result looks more like >>18377827 and less like a smooth paste. You may rinse it after to remove some of the excess salt if you'd like but strictly speaking, it's not necessary.

Pretty much the only thing you do with ground fish is turn it into fish balls and surimi, and the process is such a fucking hassle, filleting a whole fish and throwing it in the food processor is the easiest step. It's like the same reason you don't get packages of pre-separated egg yolks unless you're buying for industrial purposes.

It's called cans of tuna. Ground fish would have a gross texture and it would be hard to incorporate it into food. Fish is meant to be served as a fillet.
