mexican bread baker senior here. I don't know american bakeries are, but here we have to up at 3 a.m prepping what is to be delivered to the corner stores. We usually ship the bread at 5 a.m to all our clients. About 3k pieces of bread each day just for the morning to corner stores. It's a big bakery but is one of the best in town so we get lots of orders. We have to do it by hand since the owner doesn't like to use mixing machines because his dad told him never to use a mixing machine since the bread will loose flavor. The owner is from Spain. We also have a store so we open up at 6 a.m. We already have fresh bread ready for the store at that hour. The only problem when we get delayed is when one of our bread makers gets sick and misses the day so one of us, usually me, has to cover that person. Is constant sweating since we do everything by hand and the its really hot since we are close to the ovens. At 7 a.m we get a break to continue start working again at 1 p.m to have new bread ready for the 4 oclock hour when many housewives come to buy bread for the night. I live my shift at 2 p.m if we are not short staffed. Yes they pay me with a vanilla envelope but is good pay for me. $8k pesos weekly ( around $400 dollars )

When I was researching how to make flour tortillas on youtube, at least 80% of them used vegetable shortening because they believe it's healthier. Only people in farms used lard.

Even for cookies and whatnot, they use "manteca vegetal" (vegetable shortening).
