And there's a reason. It's a hard, stressful job that's very hard on your body, between the heat and the long hours standing and theconsistent cuts/burns etc, and if you work anywhere decent it's essentially a skilled trade, but you would get paid half again as much to go do absolute bottom-of-the-barrel manual labor in construction, and three times as much to ave any other skilled trade, and you'd also make way more money being FOH, so the only people tat do it are people that are really passionate about cooking, or people who really can't make it anywhere else.

I cooked a simple meal this afternoon that I lazily put together from the garden, that was 10 times better than anything he every made: guaranteed. Pork loin, with green beans and roasted acorn squash, smothered with a pan sauce that had garlic that was pulled a month ago, cucumbers finished fermented three days ago, and whole grain mustard that was made a week ago. This is a lazy day for me. And I swear, mustard pickle pan sauce with fresh squash/pumpkin is the best thing in this realm. I eat/cook good on the worst of days.
