you'll need a rectangular mold to make the egg into a sheet shape

if you dont have this then just use an 8 or 10 inch pan, scramble the egg in a bowl first, then on medium low heat on the buttered pan, put the mixed egg in and swirl the pan a bit so the egg covers the whole bottom of the pan like a sheet. dont take your eyes off it. the very second it begins to set, lift it off carefully with a spatula and fold it onto itself in half, then in half again. wa la

Don't add cheese to the egg, just beat the egg and pour it in the pan and let it cook until it's done as one sheet of egg. Then fold it up and put it on the sandwich, add cheese to the sandwich in slices.

This. If you really suck and keep having the eggs go over, you can mix water/some liquid in to the beaten eggs before you pour. The excess liquid will evaporate and it'll give you more of a window before the eggs go to shit.
you could also use this for flavoring by adding whatever stock you want.

the problem with making a good omelette is that it requires perfect attention to sticking in the pan, timing, and technique, and doing that in bacon grease/ fond makes it more difficult. So you're choosing a method of egg cooking that wastes the flavor of your bacon fat and basically requires a separate pan. If you fried your eggs you could do that in bacon fat and baste them with it.

Anon, you're in luck: I make a bacon, egg, and cheese sandwich on an english muffin almost every day and am very good at it.
Tomorrow, I am going to make fresh english muffins. Then I am going to make a fresh bacon, egg, and cheese sandwich on an english muffin and post a thread about it.

Tips for the eggs
Use a 12" skillet and a single egg for a very thin layer like in your pic. If it's too thick, it won't cook quick enough and will get overcooked on the outside. Your egg shouldn't need to be on the heat more than 90 seconds, any more and your pan is either too cold or too small
Recipe:
Whisk 1 egg with salt in a bowl
Add to medium hot skillet full of bacon fat
Immediately swirl to coat the bottom.
While you swirl, the egg will begin to set, it should be ready for the cheese by the time you are done swirling.
let it sit on the heat for about a minute until it's almost set
fold the egg around the cheese so the cheese is in the middle of the folded egg stack. The heat from the egg melts the cheese.
You should fold it and remove it from the heat as quick as possible.
Pic rel is how I fold. The cheese goes in the area folded third. It'll end up in the center of the stack.

McDonald's breakfast sandwiches really are the pinnacle of fast food breakfast, no one can compete. Its truly mind blowing how it is. I always get the #4 sausage and egg biscuit and add two slices of cheese with either a sprite or orange juice. To top it off i add a packet of grape jelly, I'm getting hard just thinking about it
