I lived with a Mexican friend and his family for a bit when I was in Michigan. My memory is kind of a blur because I was hard on the booze at the time, but I remember one Christmas we played some backwards version of rummy and we had menudo with pieces of bread with lime juice, one of the best meals I’ve ever had. Breakfast was usually tortillas with bar s hotdogs, eggs, and cheese, always politely declines because it looked fucked and I’m not really a breakfast person. NTA but you sear chicken thighs and legs, boil with salt, pepper, onion and garlic. Buy the achiote paste already made, since it's a plat that only grows in a couple places south of Mexico it's very hard to source the raw materials to make the paste, at stores in the states it probably comes in a little box like pic related. Once the chicken is done, add a bit of oil to a pot, add the paste, fry it a minute, and add water little by little until you get a nice, saucy consistency. Drop chicken into the sauce, heat for a couple minutes, serve topped with sesame seeds and a side of red rice.

A place in Canada here is absolutely full of Mexicans because they all work the greenhouses. They're great people and put up some fucking unreal restaurants. All the niggers can gtfo back to Jamaica we fucking hate them all.

Vegetable fritters are a common main dish, in my family we had them at least once as week, but it's nothing glamorous so you won't see it at a restaurant. Aside from that there's stuffed cabbage, chicken caldo with string beans, corn, carrots, potato and chickpeas at least, purslane with pork in green sauce, etc.
The day-to-day "fonda" restaurants have 3 to 5 different main dishes everyday, and most have a "vegan"ish option; more for variety's sake rather than anything else, and most of the time it's the fritters, or chiles rellenos

homemade mexican food is great, I just had pozole today.

something we sometimes prepare here is cordero en ataud (casket lamb). we dress a lamb, remove its organs, get some sauce all over it with a brush (I also make some indentions with a knife and out some garlic there) and then put it as-is on a 'casket' (wooden box lined with metal, with a metal cover), then you add some wood on top and keep a fire for about 6 hours. halfway there you can take it out to add some more sauce.
meanwhile with its tripe, liver and kidneys we prepare Machitos.
when the lamb is ready you just heat up tortillas on top of the fire, add some onion or pico de gallo to your tacos and maybe hot sauce.

I like tacos dorados. Basically rolled up tacos with shredded chicken breast inside, fried, then topped off with mexican sour cream, cotija cheese, cabbage, several types of salsas, and sometimes some sliced tomatoes on top or on the side.
