guava works ok with late and post add IPAs (juicier ones, not trad or west coast), but lactose puts a bit of a wrench in the gears. If it's too bitter, or overwhelmingly citrusy, the end result isn't sweet and creamy, it's just heavy with a backbeat of cheese. Hops and their blending are what those beer guys are in to, and the IPA is the vehicle for that. I think most IPAs have a pretty similar mash bill and you can the of that as the canvass for the hops. There are also just a lot more ipas out there wince it's comparatively cheap and easy for craft brewers to make.
The difference between any two stouts for example is usually much more subtle, because the impacts of mash bills and yeast and techniques are subtle within a style.
