Modern gas stoves seem horrendously inefficient with their giant burners throwing off heat way outside the area of the pan. I tried to cook steak at my mom's house and the air around the pan was so hot that it hurt my hand to even get close enough to turn the steak, but the pan itself didn't even get as hot as when I cook steak at home on a much older gas stove that doesn't burn my hands. The heat in the kitchen today is much higher than it used to be, it seems, and I wonder why they would make stoves in this way to begin with.

I agree, that's why I prefer old fashioned electric coils. You can vary the heat easily, heat up the pun faster by rubbing the pan or pushing it into the coil, stop it heating instantly by lifting it up a few inches.
