I bought over two pounds of liver, but when I started cutting up in bite sized parts/slices I noticed it's very mushy and not firm or jelly like previous times I've had prepared liver. Is it normal?

Just smells like blood.

1.1kg in the freezer. If its fucked I'll just grind and make beef balls. If they accidently gave me calf liver they sold it to me with adult beef liver price. Which is usually 15% more expensive in my country.

it can be ok depending how you freeze it. if you dry it off and wrap it tightly it will be ok if it was good liver to begin with. if there's a lot of water the ice crystallisation can damage the meat. what did it look like before freezing?

IINM/IIRC, you have to salt the liver first then pat it dry when you freeze it. At least that's what me ol' mam did when she'd prepare a freshly slaughtered and butchered hog, lamb or goat for freezing.
After seeing >>18306680, I would guess she did it to extract as much liquid out of it before freezing.

I always thought I didn't like cooked-from-thawed liver cuz that's mostly what my mother prepared but it turns out I just don't like liver, even fresh. Well, pork liver's okay and birds and fish tend to have tasty livers, but fuck lamb, veal, beef, kid and goat livers. Fuck them all.
