Freshly opened can of jam has a big patch of mold. It even made the popping sound when the seal broke

Yeah, it was canned in a way that allowed mold in. Notice how the rest of it is fine. There's no bacteria. The 1 week to one month zone is dangerous and we're outside it

it definitely means it just got a hot water process instead of a pressure process, and it probably means he let the water get too low during the boil.
