you would usually take an old chicken to boil, but you can't go wrong with boiling it.

>boil the whole thing for 45min-1hour
>take the chicken out, let it cool a little bit on a big pan/plate
>remove all the meat
>put back bones and cartilage in water with celery, carrot, onnios and whatever herbs you have
>boil for one more hour
>strain
>take some of the broth, add fresh carrots, celeris, onios. noodles go in for 10 minutes, add some chicken, salt + pepper
>serve with bread and cheese
best broth and probably healthiest meal you can make

I threw in some carrots, peas, onions, parsley, and garlic, then took out the chicken. Next I'll cut up the chicken and add it back in along with some evaporated milk.

The chicken and evaporated milk is in. I will make the dumplings now. I also might add flour to the soup to thicken it. I'd use corn starch but I dont have any and it was out of stock at the store.
