Compared to what other chains? Their meat and bread is a lot better than Subway. Firehouse is a little closer to them in quality but I'd still rank them below Jersey Mike's. Jimmy John's is more what I'd call mediocre (though higher end of mediocre). Really basic but not bad. Which Wich is some of the worst food I've ever had. And I haven't tried Quiznos though I've heard good things about them.

Publix is overrated by people who have never had sandwiches from the greatest sandwich region in the world, the northeast corridor. Certain places have a single good sandwich but the only region that seems to be able to compete in variety is Vietnam with their Banh Mis. In Virginia we occasionally get places that bring the talent from the northeast region.

I worked at one in high school and the management regularly did sketchy shit with the food that was disgusting. One time when we were closed over a 3 day weekend instead of buying more lettuce on Tuesday (which costs almost nothing in bulk) they took the stainless food trays off the line filled with chopped lettuce from Friday, filled them with water and put them in the walk in and thawed them out on Tuesday. Shit looked fucking brown and wilted. Also one time when we were about 2 minutes before closing a dad and his kid came in and ordered a kids sandwich. Policy was that in order to close quicker we would throw out the specialty breads like kids loafs 10 kins before closing. Well instead of cutting a longer 12 inch loaf into a kid sized one, the owner/manager pulled the loaf out of the trashcan and served it to this child. I quit shortly after. Never eat at these places in Texas cause these same owners own all of them.

The one thing I didn't like about Jersey Mike's is that the amount of red wine vinegar / oil blend varies wildly from order to order.
I prefer them to use a decent amount of it, but sometimes it's like they barely even use it at all (though I can tell from the bread they always do add at least a tiny bit).
I think part of it is I normally specify ingredients I don't want in my uber eats order for them, and I know sometimes restaurant workers see certain ingredients held and interpet that as "he doesn't want any dressing / toppings."

i worked at a subway out of high school 17 years ago and the cold cut combo still hasn't changed. i couldn't tell people what meats it had. i would just tell them "i don't know" or "it's turkey ham bologna and something else." it effectively depicted how gross it was and made them order something else, especially since it came all pre-assembled on wet deli paper in label-less shrink wrapped packages that had nothing other than a batch number on it.

As opposed to talking about "every local deli in existence," each of which is entirely self-contained and none of which are coordinating with each other on the food they serve or how they prepare it.
Not sure how this isn't really obviously an inane thing to say to you. Some local places are probably the best sources for sandwiches in the world. SOME. Many others are probably absolute shit. A franchise in contrast gives you a decent amount of familiarity with what you're getting into. The McDonald's model was successful just because it's fast and cheap. The other part that makes it work is it's very familiar. I can go anywhere in the US and there will likely be a McDonald's around. And I'll at least have an idea of the what kind of meal I'm going to have if I grab a Sausage McMuffin from there vs. if I go to Literally Who's Mom & Pop Diner and maybe get a better meal or maybe get something I hate that wastes my time and money.

Theoretically Quiznos has good food, but their corporate are a bunch of pyramid-scheme running pricks who put their franchisees into extortionist contracts and force them to buy overpriced, expired produce from a designated supplier (probably in exchange for kickbacks.) Therefore, it is very likely that any Quiznos you go to will either have really bad staffing issues, or is outright imminently bankrupt.
