I'm an actual cook and typically use the edge of the cutting board. OP's image specifically has a bowl with an super thin edge to make it look like cracking an egg on the edge of a bowl is like cracking it with a knife or something. There are plenty of rounded edges to crack an egg on in a kitchen, and I've never seen anyone cracking a dozen eggs to make creme brulee or whatever doing it on a flat surface. That would just take too long.

As someone who cracks around 80 eggs a week.

The main downside of edge is you will eventually get a small amount egg shell in, however I think the psychopathy around eggshell is dumb, at worst you get one or two bits that will be unnoticed 99% of the time and causes no harm. The edge is quick and reliable.

The flat however I find slower, cracking an egg with one hand makes opening a flat alot harder and slower than an edge more so if you are working with small eggs over medium. While it is true you don't puncture the egg with shell going inside, I find the web cracked shell can end up dumping more shell in after opening the membrane since you cause far far more cracks to actually come up.

Tldr edge is faster and egg shells are apart of life, flat is slower and can end up getting more shells in if your going fast and or one handed.

It just doesn't work as well, and the supposed problems with cracking an egg on the edge of something aren't real problems for most people. I edge crack. I tried flat crack and it fucking sucks. You are smashing the egg along the flattest, largest surface. That's not how you fucking break something, that's basic physics. Every time I have tried to flat crack I get a smashed in egg with a million shards that WILL get into the whites and have to be picked out.
